  1. 1. Wash the sweet potatoes thoroughly under running water.
  2. 2. Dry the potatoes with a kitchen towel.
  3. 3. Wrap each sweet potato tightly in a piece of aluminum foil.
  4. 4. Poke the foil several times with a fork to allow steam to escape.
  5. 5. Place the packets on the grill.
  6. 6. Grill the sweet potatoes for about 40 minutes.
  7. 7. Turn the packets regularly during the cooking time.
  8. 8. Test for doneness by piercing the potato with a fork.
  9. 9. The sweet potatoes are done when the fork enters easily.
  10. 10. Wash the chili pepper and cut it open lengthwise.
  11. 11. Remove the seeds and white pith from the chili.
  12. 12. Cut the chili into small pieces.
  13. 13. Peel the garlic clove and chop it finely.
  14. 14. Mash the garlic with a pinch of salt into a paste.
  15. 15. Mix the butter, chili, garlic paste, and parsley together.
  16. 16. Store the chili butter in the refrigerator until serving.
  17. 17. Remove the grilled sweet potatoes from the foil.
  18. 18. Cut each potato open lengthwise.
  19. 19. Place a dollop of chili butter on the warm potato.
  20. 20. Serve the remaining butter separately in a small bowl.
