Ingredients
- 400 g sweet potatoes
- 2 olive oil
- salt
- pepper
Instructions
- 1. Peel the sweet potatoes thoroughly.
- 2. Rinse the peeled tubers under running water.
- 3. Fill a pot with water and add some salt.
- 4. Bring the salted water to a boil.
- 5. Add the sweet potatoes to the boiling water.
- 6. Cook the potatoes for about 25 minutes until tender.
- 7. Drain the cooking water.
- 8. Let the sweet potatoes drain well in a colander.
- 9. Let the potatoes cool down briefly.
- 10. Cut the sweet potatoes into bite-sized pieces.
- 11. Heat olive oil in a frying pan.
- 12. Add the sweet potato pieces to the hot pan.
- 13. Fry the potatoes for 5 to 7 minutes.
- 14. Turn the pieces occasionally so they brown evenly.
- 15. Season the finished potatoes with salt.
- 16. Add fresh pepper to taste.
