  5. 5. Add the sweet potatoes to the boiling water.
  6. 6. Cook the potatoes for about 25 minutes until tender.
  7. 7. Drain the cooking water.
  8. 8. Let the sweet potatoes drain well in a colander.
  9. 9. Let the potatoes cool down briefly.
  10. 10. Cut the sweet potatoes into bite-sized pieces.
  11. 11. Heat olive oil in a frying pan.
  12. 12. Add the sweet potato pieces to the hot pan.
  13. 13. Fry the potatoes for 5 to 7 minutes.
  14. 14. Turn the pieces occasionally so they brown evenly.
  15. 15. Season the finished potatoes with salt.
