🍽️ Grilled Skewers with Sweet Potato and Avocado

Ingredients
- 500 g large sweet potatoes (1 large sweet potato)
- salt
- 350 g small avocados (2 small avocados)
- 3 tbsp sesame oil
- pepper
- 2 garlic cloves
- 20 g ginger (1 piece)
- 4 sprigs cilantro
- 1 red chili pepper
- 0.5 tsp peppercorns
- 0.5 tsp coriander seeds
- 2 tbsp lime juice
- 1 tsp agave syrup
- 2 tbsp rice vinegar
- 2 tbsp soy sauce
- 8 wooden skewers
Instructions
- 1. Preheat your grill.
- 2. Peel the sweet potato.
- 3. Cut the sweet potato into small, bite-sized cubes.
- 4. Bring a pot of water and salt to a boil.
- 5. Add the sweet potato cubes to the boiling water.
- 6. Cook the sweet potatoes for about 5 minutes.
- 7. Drain the sweet potatoes.
- 8. Let the sweet potatoes drain well.
- 9. Peel the avocados.
- 10. Cut the avocados in half lengthwise.
- 11. Remove the pits from the avocado halves.
- 12. Scoop out the flesh of the avocados with a spoon.
- 13. Cut the avocado flesh into small, bite-sized pieces.
- 14. Get 8 wooden skewers ready.
- 15. Thread the sweet potato and avocado pieces onto the skewers alternately.
- 16. Brush the skewers with 1 tablespoon of oil.
- 17. Season the skewers with salt and pepper.
- 18. Place the skewers on the preheated grill.
- 19. Grill the skewers for about 5 minutes.
- 20. Turn the skewers occasionally while grilling.
- 21. Peel the garlic.
- 22. Peel the ginger.
- 23. Chop the garlic and ginger very finely.
- 24. Wash the coriander.
- 25. Shake the coriander dry.
- 26. Chop the coriander finely.
- 27. Cut the chili pepper lengthwise.
- 28. Remove the seeds from the chili pepper.
- 29. Wash the deseeded chili pepper.
- 30. Chop the chili pepper finely.
- 31. Put pepper and coriander seeds into a mortar.
- 32. Coarsely crush the spices in the mortar.
- 33. Get the remaining oil for the dressing.
- 34. Squeeze the lime juice.
- 35. Get the agave syrup.
- 36. Get the rice vinegar.
- 37. Get the soy sauce.
- 38. Mix the crushed spices with the remaining oil.
- 39. Stir in the lime juice.
- 40. Add the agave syrup.
- 41. Add the rice vinegar.
- 42. Add the soy sauce.
- 43. Stir in the finely chopped garlic and ginger.
- 44. Stir in the finely chopped coriander.
- 45. Stir in the finely chopped chili pepper.
- 46. Finally, adjust the seasoning of the dressing.
- 47. Get 4 plates ready.
- 48. Place the grilled skewers on the plates.
- 49. Drizzle the skewers with the dressing.
