🍽️ Creamy Sweet Potato Casserole with Goat Cheese

Ingredients
- 800 g sweet potatoes (2 sweet potatoes)
- 200 ml heavy cream
- 50 g freshly grated cheese (e.g. mozzarella, Gruyère)
- 100 g sour cream
- 1 tbsp chive rings
- 1 tsp curry powder
- salt
- pepper
- 1 tsp butter
- 50 g soft goat cheese
Instructions
- 1. Peel the sweet potatoes and wash them thoroughly.
- 2. Slice the sweet potatoes into very thin rounds or use a grater to shred them.
- 3. Stir the cream in a separate bowl with the grated cheese and the sour cream.
- 4. Add the finely chopped chives, curry powder, salt, and pepper to the cream mixture and mix everything well.
- 5. Grease a baking dish with the butter to prevent sticking.
- 6. Place the sweet potato slices evenly into the prepared dish.
- 7. Pour the seasoned curry cream evenly over the potato slices.
- 8. Crumble the goat cheese into small pieces or cut it into cubes and sprinkle it on top of the casserole.
- 9. Preheat your oven to 180 degrees Celsius (160 degrees Celsius for fan-assisted or gas mark 2 to 3).
- 10. Bake the casserole for 45 minutes in the preheated oven until it is golden brown and cooked through.
- 11. Remove the casserole from the oven and serve it directly in the dish.
