🍽️ Crispy Sweet Potato Fritters

Ingredients
- 500 g potatoes
- 30 g yeast
- 125 ml milk
- 100 g sugar
- 50 g raisins
- 200 ml rum
- 100 g butter
- 3 eggs
- 1 pinch salt
- 250 g flour
- 50 g almond kernels
- 2 l oil (for deep frying)
- 1 tsp cinnamon powder
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Boil the potatoes in water for about 25 minutes until they are soft.
- 3. Drain the water and rinse the potatoes briefly with cold water.
- 4. Peel the potatoes.
- 5. Press the potatoes through a potato ricer.
- 6. Let the mashed potatoes cool down completely.
- 7. Dissolve the yeast in the milk.
- 8. Add one teaspoon of sugar to the milk-yeast mixture.
- 9. Place the raisins in the rum.
- 10. Beat the butter with 50 grams of sugar until fluffy.
- 11. Stir the eggs into the butter-sugar mixture one by one.
- 12. Stir in the yeast-milk mixture.
- 13. Add the cooled potatoes to the mixture.
- 14. Add the salt.
- 15. Add the flour.
- 16. Add the almonds.
- 17. Add the soaked raisins.
- 18. Mix all ingredients well.
- 19. Cover the dough.
- 20. Let the dough rest in a warm place for about 40 minutes.
- 21. Heat the oil to 180 degrees Celsius.
- 22. Check the oil temperature by holding a wooden spoon handle in the oil.
- 23. The oil is ready when small bubbles rise from the wood.
- 24. Scoop walnut-sized portions of dough with a teaspoon.
- 25. Fry the portions in batches in the hot oil.
- 26. Fry the fritters for about 6 to 8 minutes.
- 27. Remove the finished fritters from the oil.
- 28. Let them drain on kitchen paper.
- 29. Mix the remaining sugar with cinnamon.
- 30. Roll the still hot fritters in the cinnamon-sugar mixture.
