🍽️ Crispy Apple Soufflé

Ingredients
- 120 g medium-sized sweet apples (1 medium-sized sweet apple)
- 0.5 small lemon
- 1 pinch cinnamon
- 1 egg white
- 0.5 tsp sugar
Instructions
- 1. Wash the apple thoroughly and pat it dry.
- 2. Peel the skin off the apple.
- 3. Cut the apple into four equal pieces.
- 4. Remove the core from the apple quarters.
- 5. Cut the apple quarters into thin strips.
- 6. Place the apple strips into a small pot.
- 7. Squeeze the half lemon.
- 8. Measure one teaspoon of lemon juice.
- 9. Add the lemon juice and two tablespoons of water to the apples in the pot.
- 10. Add a pinch of cinnamon to the apple mixture.
- 11. Stew the apples until soft over medium heat.
- 12. This takes about six to eight minutes.
- 13. Press the cooked apples through a fine sieve into a bowl.
- 14. Let the apple puree cool down briefly.
- 15. Separate the egg into egg white and egg yolk.
- 16. Place the egg white into a small bowl.
- 17. Use the egg yolk for another purpose.
- 18. Whip the egg white stiff using a hand mixer.
- 19. Stir in the sugar slowly while whipping.
- 20. Gently fold the cooled apple puree into the egg whites.
- 21. Fill the mixture into a small round baking dish with eight centimeters in diameter.
- 22. Preheat the oven.
- 23. Bake the soufflé at 180 degrees Celsius conventional heat.
- 24. Alternatively use 160 degrees Celsius fan-forced heat.
- 25. Alternatively use gas level two to three.
- 26. Place the dish on the middle rack.
- 27. Bake the soufflé for about fifteen minutes until golden yellow.
- 28. Serve the soufflé immediately.
- 29. It collapses quickly.
