  2. 2. Peel the skin off the apple.
  3. 3. Cut the apple into four equal pieces.
  4. 4. Remove the core from the apple quarters.
  5. 5. Cut the apple quarters into thin strips.
  6. 6. Place the apple strips into a small pot.
  7. 7. Squeeze the half lemon.
  8. 8. Measure one teaspoon of lemon juice.
  9. 9. Add the lemon juice and two tablespoons of water to the apples in the pot.
  10. 10. Add a pinch of cinnamon to the apple mixture.
  11. 11. Stew the apples until soft over medium heat.
  12. 12. This takes about six to eight minutes.
  13. 13. Press the cooked apples through a fine sieve into a bowl.
  14. 14. Let the apple puree cool down briefly.
  15. 15. Separate the egg into egg white and egg yolk.
  16. 16. Place the egg white into a small bowl.
  17. 17. Use the egg yolk for another purpose.
  18. 18. Whip the egg white stiff using a hand mixer.
  19. 19. Stir in the sugar slowly while whipping.
  20. 20. Gently fold the cooled apple puree into the egg whites.
  21. 21. Fill the mixture into a small round baking dish with eight centimeters in diameter.

  23. 23. Bake the soufflé at 180 degrees Celsius conventional heat.
  24. 24. Alternatively use 160 degrees Celsius fan-forced heat.

  26. 26. Place the dish on the middle rack.
  27. 27. Bake the soufflé for about fifteen minutes until golden yellow.
  28. 28. Serve the soufflé immediately.
