🍰 Sweet Rice Pudding with Peaches

Ingredients
- 1 vanilla pod
- 1 tbsp raw cane sugar
- 500 ml milk (1.5% fat)
- 125 g risotto rice
- 2 tbsp sliced almonds
- 2 peaches
- 0.5 orange
- 3 tbsp honey
- 4 tbsp yogurt (3.5% fat)
Instructions
- 1. Slice the vanilla pod lengthwise.
- 2. Scrape out the vanilla seeds with a knife.
- 3. Add the vanilla seeds and sugar to the milk.
- 4. Bring the milk mixture to a boil.
- 5. Stir the rice into the hot milk.
- 6. Let the rice dish simmer on low heat for 25 to 30 minutes.
- 7. Stir occasionally during the cooking process.
- 8. Heat a pan without any fat.
- 9. Toast the almonds in the pan until light brown.
- 10. Remove the almonds from the pan.
- 11. Let the almonds cool down on a plate.
- 12. Wash the peaches thoroughly.
- 13. Cut the peaches in half.
- 14. Remove the pits from the peach halves.
- 15. Place the peaches cut-side up in a baking dish.
- 16. Squeeze the orange to get the juice.
- 17. Mix three tablespoons of orange juice with honey.
- 18. Drizzle the honey-orange mixture over the peaches.
- 19. Preheat the oven grill.
- 20. Place the baking dish on the second rack from the bottom.
- 21. Grill the peaches for 8 to 10 minutes.
- 22. Remove the rice dish from the heat.
- 23. Stir the yogurt into the warm rice dish.
- 24. Portion the rice dish onto plates.
- 25. Place the grilled peaches alongside.
- 26. Sprinkle the dish with the toasted almonds.
- 27. Serve the dish immediately.
