🍰 Sweet Coconut Rice

Ingredients
- 250 g glutinous rice
- 300 ml coconut milk
- 80 g palm sugar
- 1 tbsp lime juice
- 1 mango
- 1 tbsp sesame seeds (roasted)
Instructions
- 1. Rinse the rice in a sieve under running water.
- 2. Place the rice in a bowl and cover it with water.
- 3. Let the rice soak in the water overnight.
- 4. Rinse the soaked rice again in the sieve.
- 5. Drain the rice well.
- 6. Line a bamboo steamer basket with a cloth.
- 7. Place the rice into the prepared steamer basket.
- 8. Cover the basket.
- 9. Steam the rice over hot steam for 20 minutes.
- 10. Heat the coconut milk in a pot.
- 11. Stir the sugar and lime juice into the coconut milk.
- 12. Bring the mixture to a boil until the sugar has completely dissolved.
- 13. Remove the pot from the heat.
- 14. Fold the steamed rice into the coconut milk mixture.
- 15. Let the rice cook through in the liquid for 10 to 15 minutes.
- 16. Peel the mango.
- 17. Cut the flesh away from the pit.
- 18. Cut the fruit into thin strips.
- 19. Use a dessert ring to plate the rice.
- 20. Place the mango strips on top of the rice.
- 21. Sprinkle the dish with sesame seeds.
- 22. Serve the rice warm.
