  1. 1. Rinse the rice in a sieve under running water.
  2. 2. Place the rice in a bowl and cover it with water.
  3. 3. Let the rice soak in the water overnight.
  4. 4. Rinse the soaked rice again in the sieve.
  5. 5. Drain the rice well.
  6. 6. Line a bamboo steamer basket with a cloth.
  7. 7. Place the rice into the prepared steamer basket.
  8. 8. Cover the basket.
  9. 9. Steam the rice over hot steam for 20 minutes.
  10. 10. Heat the coconut milk in a pot.
  11. 11. Stir the sugar and lime juice into the coconut milk.
  12. 12. Bring the mixture to a boil until the sugar has completely dissolved.
  13. 13. Remove the pot from the heat.
  14. 14. Fold the steamed rice into the coconut milk mixture.
  15. 15. Let the rice cook through in the liquid for 10 to 15 minutes.
  16. 16. Peel the mango.
  17. 17. Cut the flesh away from the pit.
  18. 18. Cut the fruit into thin strips.
  19. 19. Use a dessert ring to plate the rice.
  20. 20. Place the mango strips on top of the rice.
