🍰 Sweet Sweet Potato Cake

Ingredients
- 750 g sweet potatoes
- 250 g butter
- 150 g powdered sugar
- 3 eggs
- limes
- juice of one lemon
- 1 pinch salt
- 1 tbsp cinnamon
- 1 tbsp vanilla
- 2 tbsp rum
- 2 vanilla pods
Instructions
- 1. Wash the sweet potatoes thoroughly.
- 2. Peel the sweet potatoes.
- 3. Cut the sweet potatoes into small cubes.
- 4. Place the cubes in water with lemon juice for 10 minutes.
- 5. Bring water to a boil and add some salt.
- 6. Cook the sweet potatoes for 20 minutes until tender.
- 7. Puree the cooked sweet potatoes with a hand blender.
- 8. Place the pureed sweet potatoes in a bowl.
- 9. Add the eggs, butter, lime juice, cinnamon, vanilla, powdered sugar, and rum.
- 10. Knead the ingredients for 3 minutes to form a smooth dough.
- 11. Grease a 26 cm (10 inch) springform pan.
- 12. Pour the dough into the prepared pan.
- 13. Preheat the oven to 150 degrees Celsius.
- 14. Bake the cake for 20 minutes in the preheated oven.
- 15. Insert a wooden skewer into the center to check if the cake is done.
- 16. Garnish the finished cake with two vanilla pods.
