🍰 Sweet Millet Casserole with Clementines

Ingredients
- 150 g millet
- 1 vanilla pod
- 0.5 organic lemon
- 0.5 tsp cinnamon powder
- 2 tbsp raw cane sugar
- 380 ml oat drink (oat milk)
- 2 mandarins
- 3 eggs
- 1 pinch salt
- 300 g lactose-free quark (20 % fat)
- 1 tbsp butter
- 2 tbsp sliced almonds
Instructions
- 1. Rinse the millet thoroughly. Cut the vanilla pod lengthwise and scrape out the seeds with a knife. Rinse half of the lemon under warm water, pat dry, and finely grate the zest. Then squeeze out the juice.
- 2. Add the millet, vanilla seeds, cinnamon, sugar, and oat drink to a pot. Bring to a boil and simmer over medium heat according to the package instructions, stirring occasionally. Then remove from the heat and let it swell for 10 minutes without a lid.
- 3. In the meantime, peel the mandarins and cut them crosswise into thick slices. Separate the eggs. Beat the egg whites with a pinch of salt until stiff. Mix the egg yolks with lemon zest, lemon juice, and quark, then stir into the millet. Gently fold in the egg whites.
- 4. Grease a baking dish. Fill in the millet-quark mixture, smooth it out, and top with the mandarins. Bake in a preheated oven at 180 °C (convection 160 °C; gas: setting 2–3) for 40–50 minutes. Before serving, sprinkle the sweet millet casserole with sliced almonds.
