Ingredients
- 200 g wheat wholemeal flour
- 200 g spelt flour (Type 630)
- 100 g ground hazelnut kernels
- 125 g raw cane sugar
- 0.5 tsp cream of tartar baking powder
- 160 g margarine
- 2 eggs
- 1 egg white
- 125 g icing sugar
- 2 tsp cocoa powder (to taste)
- 50 g dried fruit (e.g. mango, raisins, cranberries)
- 50 g almond kernels and seeds (e.g. sunflower, pine, pistachio kernels)
Instructions
- 1. Put both types of flour, the nuts, the sugar, the baking powder, the margarine, and two eggs into a large mixing bowl.
- 2. Mix the ingredients with the dough hooks of a hand mixer until you have a crumbly dough.
- 3. Lightly dust your work surface with flour.
- 4. Place the dough on it and quickly knead it into a shortcrust pastry using your hands, keeping them as cool as possible.
- 5. Shape the dough into a ball and press it down slightly.
- 6. Wrap the dough ball in cling film.
- 7. Let the dough rest in the refrigerator for at least two hours.
- 8. Take the dough out of the refrigerator in portions.
- 9. Roll each portion on the floured work surface with a rolling pin to a thickness of about five millimeters.
- 10. Cut out the cookies into the desired shapes using cookie cutters.
- 11. Poke a small hole into each cookie using a toothpick or wooden skewer.
- 12. Line a baking tray with baking paper.
- 13. Arrange the cookies on the tray.
- 14. Preheat the oven to 175 degrees Celsius (160 degrees Celsius for fan-assisted or gas mark 2).
- 15. Bake the cookies for about eight to ten minutes.
- 16. Take the cookies out of the oven.
- 17. Let them cool completely on a wire rack.
- 18. Separate the remaining egg.
- 19. Put the egg white into a tall container.
- 20. Whip the egg white stiffly using the beaters of a hand mixer.
- 21. Stir the powdered sugar into the whipped egg white.
- 22. Color half of the sugar glaze with cocoa powder if you like.
- 23. Dice the larger dried fruit very finely.
- 24. Brush the cooled cookies with the sugar glaze.
- 25. Decorate the cookies as you like with almonds, seeds, and the finely diced dried fruit.
- 26. Let the decorated cookies dry completely.
- 27. If desired, thread thin ribbon loops through the holes.
