🍰 Sweet Pastry Rolls "Ali Baba"

Ingredients
- 8 sheets Spring roll pastry (frozen) (each 15 x 15 cm)
- 40 g Couscous (instant)
- 70 g fresh dates (8 fresh dates)
- 50 g chopped almond kernels
- 40 g liquid honey (2 tbsp)
- 20 g Butter (1 tbsp)
- 1 pinch ground star anise
- 1 pinch ground cinnamon
- 1 Egg white
Instructions
- 1. Place the puff pastry sheets side by side on your work surface.
- 2. Cover them with a damp kitchen towel.
- 3. Let the dough thaw at room temperature.
- 4. Put the couscous into a large bowl.
- 5. Pour about 100 milliliters of boiling water over the couscous.
- 6. Let the couscous swell for 10 minutes.
- 7. Pit the dates in the meantime.
- 8. Chop the dates coarsely.
- 9. Put the chopped almonds into a non-stick frying pan.
- 10. Toast the almonds without extra fat until golden brown.
- 11. Add the chopped dates and toasted almonds to the couscous.
- 12. Add honey, butter, star anise, and cinnamon.
- 13. Mix all filling ingredients well.
- 14. Separate one egg into egg white and egg yolk.
- 15. Use the egg yolk for another purpose.
- 16. Lightly beat the egg white in a small bowl.
- 17. Brush the edges of the pastry sheets with the egg white.
- 18. Place two tablespoons of the couscous filling onto the pastry sheets.
- 19. Roll up the pastry sheets tightly.
- 20. Fold in the side ends of the rolls.
- 21. Line a baking tray with baking paper.
- 22. Place the pastry rolls on the prepared tray.
- 23. Preheat the oven to 200 degrees (convection 180 degrees or gas mark 3).
- 24. Bake the rolls for 15 minutes in the preheated oven.
