  1. 1. Place the puff pastry sheets side by side on your work surface.
  2. 2. Cover them with a damp kitchen towel.
  3. 3. Let the dough thaw at room temperature.
  4. 4. Put the couscous into a large bowl.
  5. 5. Pour about 100 milliliters of boiling water over the couscous.
  6. 6. Let the couscous swell for 10 minutes.
  7. 7. Pit the dates in the meantime.
  8. 8. Chop the dates coarsely.
  9. 9. Put the chopped almonds into a non-stick frying pan.
  10. 10. Toast the almonds without extra fat until golden brown.
  11. 11. Add the chopped dates and toasted almonds to the couscous.
  12. 12. Add honey, butter, star anise, and cinnamon.
  13. 13. Mix all filling ingredients well.
  14. 14. Separate one egg into egg white and egg yolk.
  15. 15. Use the egg yolk for another purpose.
  16. 16. Lightly beat the egg white in a small bowl.
  17. 17. Brush the edges of the pastry sheets with the egg white.
  18. 18. Place two tablespoons of the couscous filling onto the pastry sheets.
  19. 19. Roll up the pastry sheets tightly.
  20. 20. Fold in the side ends of the rolls.
  21. 21. Line a baking tray with baking paper.
  22. 22. Place the pastry rolls on the prepared tray.
  23. 23. Preheat the oven to 200 degrees (convection 180 degrees or gas mark 3).
  24. 24. Bake the rolls for 15 minutes in the preheated oven.
