🍲 Creamy Sweet Soup with Blueberries and Lime

Ingredients
- 200 g Skyr
- 500 ml Buttermilk
- 60 g Oats
- 3 tbsp Honey (more to taste)
- 1 Lime
- 250 g Blueberries
- 2 tbsp fresh chopped Mint
Instructions
- 1. Mix the quark with the buttermilk until the mixture is smooth.
- 2. Add the oat flakes and 2 tablespoons of honey to the quark mixture.
- 3. Finely grate the lime zest.
- 4. Squeeze the lime juice.
- 5. Take half of the lime juice and all of the lime zest.
- 6. Stir these ingredients into the quark mixture.
- 7. Distribute the soup onto individual bowls.
- 8. Wash the blueberries thoroughly.
- 9. Pat the blueberries dry with a cloth.
- 10. Puree the blueberries finely.
- 11. Press the blueberry mixture through a sieve to remove seeds and fibers.
- 12. Stir the remaining honey and the remaining lime juice into the blueberry mixture.
- 13. Place 2 to 3 tablespoons of the blueberry mixture in the center of the soup.
- 14. Use a wooden stick to draw patterns into the soup as you like.
- 15. Sprinkle the soup with mint.
- 16. Serve the soup.
