  1. 1. Let the puff pastry thaw at room temperature.
  2. 2. Place the pastry sheets back on top of each other.
  3. 3. Roll out the dough on the work surface so that it fits the pan.
  4. 4. Lightly grease the baking pan.
  5. 5. Place the dough into the pan.
  6. 6. Press a rim out of the dough.
  7. 7. Peel the apples.
  8. 8. Cut the apples into quarters.
  9. 9. Remove the core.
  10. 10. Cut the apple pieces into wedges.
  11. 11. Drizzle the apples immediately with lemon juice.
  12. 12. Sprinkle the apples with sugar.
  13. 13. Place the apple slices on the dough in a shingled pattern.
  14. 14. Preheat the oven to 200 degrees.
  15. 15. Bake the quiche for approx. 25 minutes.
  16. 16. Warm the apricot jam in a small saucepan.
  17. 17. Press the jam through a sieve.
  18. 18. Take the quiche out of the oven.
  19. 19. Brush the quiche with the jam while still warm.
