🍽️ Sweet Quark Pancakes with Apple Salad

Ingredients
- 200 g small apples (2 small apples)
- 0.5 organic lemon
- 1 tbsp raisins
- 2 tsp honey
- 1 egg
- 1 tbsp cane sugar
- 1 pinch salt
- 150 g low-fat quark
- 30 g whole wheat semolina (3 tbsp)
- 30 g fine oat flakes (4 tbsp)
- 3 tsp rapeseed oil
- 2 tsp powdered sugar
Instructions
- 1. Wash the apples thoroughly.
- 2. Dry the apples with a cloth.
- 3. Cut the apples into eight equal pieces.
- 4. Remove the cores from the apple pieces.
- 5. Slice the apple pieces crosswise into very thin slices.
- 6. Place the apple slices into a bowl.
- 7. Rinse half of the lemon under hot water.
- 8. Dry the rinsed lemon half.
- 9. Grate the zest of the lemon half finely.
- 10. Squeeze the juice from the lemon half.
- 11. Add the lemon juice to the apple slices.
- 12. Add the grated lemon zest to the apple slices.
- 13. Mix the apple slices well with the juice and zest.
- 14. Add the raisins to the apple bowl.
- 15. Add the honey to the apple bowl.
- 16. Mix the apple bowl well with raisins and honey.
- 17. Crack the egg into a separate bowl.
- 18. Add the sugar to the bowl with the egg.
- 19. Add a pinch of salt to the bowl with the egg and sugar.
- 20. Stir the mixture with a hand mixer on whisk setting.
- 21. Continue stirring until the sugar has completely dissolved.
- 22. Add the quark to the egg-sugar mixture.
- 23. Add the semolina to the bowl.
- 24. Add the oat flakes to the bowl.
- 25. Mix all ingredients into a uniform batter.
- 26. Heat the oil in a large pan.
- 27. Dip a tablespoon into a glass of water.
- 28. Take a wet tablespoon of batter.
- 29. Repeat this until you have eight portions of batter.
- 30. Place the batter portions into the hot pan.
- 31. Press the pancakes slightly flat with the spoon.
- 32. Fry the pancakes over medium heat for about four minutes.
- 33. Fry the pancakes until golden yellow.
- 34. Turn the pancakes over to the other side.
- 35. Finish frying the pancakes for another two minutes.
- 36. Place the powdered sugar into a fine tea strainer.
- 37. Dust the pancakes with the powdered sugar.
- 38. Serve the quark pancakes together with the apple salad.
