  2. 2. Rinse the lemon under hot water and pat it dry.
  3. 3. Grate the lemon zest and squeeze out the juice.
  4. 4. Mix the quark with the butter, egg yolk, semolina, flour, vanilla powder, and honey to form a dough.
  5. 5. Fold the lemon zest and juice into the dough.
  6. 6. Place the dough in the refrigerator for 30 minutes.
  7. 7. Remove the stems from the strawberries and wash them.
  8. 8. Pat the strawberries dry with a cloth.
  9. 9. Select about 12 nice, large strawberries.
  10. 10. Divide the dough into 12 equal portions.
  11. 11. Shape each portion into a ball.
  12. 12. Press a small indentation into the center of each dough ball.
  13. 13. Place one whole strawberry into each indentation.
  14. 14. Close the dough around the strawberry and shape a dumpling.
  15. 15. Bring a pot of water to a boil and add a pinch of salt.
  16. 16. Let the dumplings cook for about 15 minutes over medium heat.
  17. 17. Melt 100 grams of sugar with one tablespoon of water into caramel.
  18. 18. Sprinkle sliced almonds into the caramel and mix everything well.
  19. 19. Spread the almond-caramel mixture onto a baking sheet lined with baking paper.
  20. 20. Let the brittle cool down completely.
  21. 21. Place the cooled brittle into a freezer bag.
  22. 22. Crush the brittle into fine pieces using a rolling pin.
  23. 23. Transfer the crushed pieces onto a plate.
  24. 24. Lift the cooked dumplings out of the water.
  25. 25. Let the dumplings drain well.
  26. 26. Roll the dumplings in the crushed brittle pieces.
  27. 27. Cut two strawberries into wedges.
  28. 28. Puree the remaining strawberries with apple juice.
  29. 29. Pour the strawberry puree mixture onto the plates.
  30. 30. Place the brittle-coated dumplings on top of the puree.
  31. 31. Garnish the plates with the strawberry wedges.
  32. 32. Wash the mint and shake it dry.
  33. 33. Decorate the sweet quark dumplings with the mint leaves.
