🍰 Sweet Quark Dumplings

Ingredients
- 250 g Low-fat quark
- 1 Organic lemon
- 50 g Butter
- 1 Egg yolk
- 50 g Spelt semolina
- 50 g Wheat flour Type 1050
- 1 Pinch Vanilla powder
- 1 Tbsp Honey
- 600 g Strawberries
- Salt
- 100 g Raw cane sugar
- 100 g sliced almond kernels
- 100 ml Apple juice
- 2 Stalks Mint
Instructions
- 1. Drain the quark.
- 2. Rinse the lemon under hot water and pat it dry.
- 3. Grate the lemon zest and squeeze out the juice.
- 4. Mix the quark with the butter, egg yolk, semolina, flour, vanilla powder, and honey to form a dough.
- 5. Fold the lemon zest and juice into the dough.
- 6. Place the dough in the refrigerator for 30 minutes.
- 7. Remove the stems from the strawberries and wash them.
- 8. Pat the strawberries dry with a cloth.
- 9. Select about 12 nice, large strawberries.
- 10. Divide the dough into 12 equal portions.
- 11. Shape each portion into a ball.
- 12. Press a small indentation into the center of each dough ball.
- 13. Place one whole strawberry into each indentation.
- 14. Close the dough around the strawberry and shape a dumpling.
- 15. Bring a pot of water to a boil and add a pinch of salt.
- 16. Let the dumplings cook for about 15 minutes over medium heat.
- 17. Melt 100 grams of sugar with one tablespoon of water into caramel.
- 18. Sprinkle sliced almonds into the caramel and mix everything well.
- 19. Spread the almond-caramel mixture onto a baking sheet lined with baking paper.
- 20. Let the brittle cool down completely.
- 21. Place the cooled brittle into a freezer bag.
- 22. Crush the brittle into fine pieces using a rolling pin.
- 23. Transfer the crushed pieces onto a plate.
- 24. Lift the cooked dumplings out of the water.
- 25. Let the dumplings drain well.
- 26. Roll the dumplings in the crushed brittle pieces.
- 27. Cut two strawberries into wedges.
- 28. Puree the remaining strawberries with apple juice.
- 29. Pour the strawberry puree mixture onto the plates.
- 30. Place the brittle-coated dumplings on top of the puree.
- 31. Garnish the plates with the strawberry wedges.
- 32. Wash the mint and shake it dry.
- 33. Decorate the sweet quark dumplings with the mint leaves.
