🍰 Sweet Polenta Squares with Cinnamon

Ingredients
- 400 ml milk (3.5% fat)
- 1 vanilla pod
- 1 piece organic lemon peel
- 2 tbsp raw cane sugar
- 3 tbsp butter
- 100 g polenta (instant)
- 2 eggs
- cinnamon
Instructions
- 1. Put the milk, the sliced vanilla pod, the lemon zest, 1 tablespoon of sugar, and 1 tablespoon of butter into a pot.
- 2. Bring the mixture to a boil while stirring.
- 3. Sprinkle in the corn grits and stir briefly.
- 4. Let the polenta swell under a lid for approx. 5 minutes.
- 5. Remove the vanilla pod and the lemon zest from the mixture and set them aside.
- 6. Line a baking tray with baking paper.
- 7. Spread the polenta mixture approx. 1 cm thick on the tray.
- 8. Let the polenta cool for at least 1 hour until it becomes firm.
- 9. Cut the cooled polenta into approx. 16 diamond shapes.
- 10. Whisk the eggs in a shallow bowl.
- 11. Dip each polenta diamond briefly into the whisked eggs.
- 12. Heat the remaining butter in a frying pan.
- 13. Fry the polenta slices on each side for approx. 2 minutes until golden brown.
- 14. Mix the remaining sugar with cinnamon.
- 15. Sprinkle the finished polenta slices with the cinnamon-sugar mixture.
- 16. Serve the slices with cherry or plum compote as desired.
