🍽️ Fruit Pancakes with Nut-Sesame Crust

Ingredients
- 1 pineapple
- 1 mango
- 1 papaya
- 2 carambola
- 3 bananas
- 250 g fresh lychee
- juice of one lemon
- 100 g peanut kernels
- 3 tbsp sesame seeds
- 5 tbsp sugar
- 350 g flour
- 4 level tsp baking powder
- 0.5 tsp ground cinnamon
- salt
- 2 tbsp vegetable oil
- 2 eggs
- 250 ml milk
- oil (for frying)
Instructions
- 1. Peel the pineapple and cut it into four quarters lengthwise. Remove the hard core and dice the fruit.
- 2. Carefully cut the mango flesh away from the skin. Slice the fruit off the core into small pieces.
- 3. Peel the papaya and cut it in half. Remove the seeds and slice the fruit.
- 4. Wash the star fruit and cut it crosswise into thin slices.
- 5. Peel the bananas and slice them into 0.5 cm thick rounds.
- 6. Peel the lychees and remove the pits from the flesh. Then cut the fruits in half.
- 7. Place all prepared fruits in a large bowl. Drizzle with lemon juice and toss gently to combine.
- 8. Coarsely crush the peanuts using a mortar and pestle or a rolling pin.
- 9. Toast the crushed peanuts together with the sesame seeds in a dry pan. Remove the pan from the heat afterwards.
- 10. Mix the roasted nut-sesame mixture with 4 tablespoons of sugar.
- 11. Take a separate bowl and mix the remaining sugar with the flour and baking powder.
- 12. Add cinnamon, salt, oil, and the eggs to the flour mixture. Stir everything well until a homogeneous batter forms.
- 13. Stir in the milk and 500 milliliters of water until the batter is thin and fluid.
- 14. Heat some oil in a large frying pan.
- 15. Pour one full ladle of batter into the hot pan. Spread it evenly to form a round pancake.
- 16. Cook the pancake over medium heat for about 1 minute.
- 17. Spread 2 tablespoons of the prepared nut-sesame-sugar mixture onto the pancake.
- 18. Cover the pan with a lid and cook the pancake for another 1 to 2 minutes.
- 19. Fold the finished pancake in half and remove it from the pan.
- 20. Keep the finished pancakes warm in the oven at 70 degrees Celsius until all are baked.
