  1. 1. Put milk, butter, sugar, and the scraped seeds of one vanilla pod into a pot.
  2. 2. Heat the mixture until it comes to a boil.
  3. 3. Stir in the semolina over medium heat.
  4. 4. Keep stirring until the mixture pulls away from the bottom of the pot.
  5. 5. Mix the egg into the semolina mixture.
  6. 6. Let the mixture cool down.
  7. 7. Bring plenty of water with a little salt to a boil.
  8. 8. Divide the semolina mixture into 8 equal portions.
  9. 9. Shape the portions into dumplings.
  10. 10. Cook the dumplings in the boiling water for 4 minutes.
  11. 11. Remove the dumplings with a slotted spoon.
  12. 12. Let the dumplings drain.
  13. 13. Mix plum puree with 2 tablespoons of orange juice, some orange zest, and cinnamon.
  14. 14. Finely chop the ginger.
  15. 15. Put the ginger, egg yolk, and sugar into a metal bowl.
  16. 16. Whisk the mixture until frothy over a hot water bath.
  17. 17. Slowly pour in the wine and continue whisking.
  18. 18. Whisk for about 5 minutes.
  19. 19. Turn off the heat.
  20. 20. Leave the bowl in the water bath.
  21. 21. Distribute the dumplings onto plates.
  22. 22. Tear open the dumplings with forks.
  23. 23. Add the plum puree on top.
  24. 24. Pour the sabayone sauce over it.
