🍽️ Sweet Semolina Dumplings

Ingredients
- 250 ml Milk
- 50 g Butter
- 10 g Sugar
- 0.5 Vanilla pod
- 90 g Durum wheat semolina
- 1 Egg
- 125 g Plum puree
- 1 unpeeled Orange
- Cinnamon
- 1 heaped tsp candied ginger cubes
- 2 Egg yolks
- 75 g Sugar
- 250 ml White wine
Instructions
- 1. Put milk, butter, sugar, and the scraped seeds of one vanilla pod into a pot.
- 2. Heat the mixture until it comes to a boil.
- 3. Stir in the semolina over medium heat.
- 4. Keep stirring until the mixture pulls away from the bottom of the pot.
- 5. Mix the egg into the semolina mixture.
- 6. Let the mixture cool down.
- 7. Bring plenty of water with a little salt to a boil.
- 8. Divide the semolina mixture into 8 equal portions.
- 9. Shape the portions into dumplings.
- 10. Cook the dumplings in the boiling water for 4 minutes.
- 11. Remove the dumplings with a slotted spoon.
- 12. Let the dumplings drain.
- 13. Mix plum puree with 2 tablespoons of orange juice, some orange zest, and cinnamon.
- 14. Finely chop the ginger.
- 15. Put the ginger, egg yolk, and sugar into a metal bowl.
- 16. Whisk the mixture until frothy over a hot water bath.
- 17. Slowly pour in the wine and continue whisking.
- 18. Whisk for about 5 minutes.
- 19. Turn off the heat.
- 20. Leave the bowl in the water bath.
- 21. Distribute the dumplings onto plates.
- 22. Tear open the dumplings with forks.
- 23. Add the plum puree on top.
- 24. Pour the sabayone sauce over it.
