🍰 Fruity Berry Jelly

Ingredients
- 10 sheets gelatin
- 150 g sugar
- 1 untreated lemon (zest)
- 500 mixed berries (strawberries, blueberries, raspberries)
- 200 g melon flesh (e.g. honeydew melon)
- 400 ml sparkling wine
Instructions
- 1. Soak the gelatin leaves in a bowl of cold water.
- 2. Combine the sugar with 200 milliliters of water and the lemon zest in a pot.
- 3. Let the mixture simmer for about 10 minutes until it thickens to a syrupy consistency.
- 4. Remove the lemon zest from the syrup.
- 5. Take the pot off the heat.
- 6. Squeeze the soaked gelatin well to remove excess water.
- 7. Warm the gelatin in a small pot until it is completely melted.
- 8. Stir the melted gelatin into the cooled syrup.
- 9. Let the gelatin-syrup mixture cool down briefly.
- 10. Wash the berries thoroughly.
- 11. Remove any stems or leaves from the berries.
- 12. Sort the berries to remove unripe or damaged pieces.
- 13. Decide whether to leave the strawberries whole or halve them, depending on their size.
- 14. Scoop small balls out of the melon flesh.
- 15. Add the melon balls to the other berries.
- 16. Line a bundt cake pan (or a similar mold) with plastic wrap.
- 17. Fill the prepared fruits into the lined mold.
- 18. Mix the sparkling wine with the cooled gelatin-syrup mixture.
- 19. Pour the liquid over the fruits in the mold.
- 20. Ensure that all fruits are completely covered with the liquid.
- 21. Cover the mold with plastic wrap.
- 22. Place the mold in the refrigerator for at least 4 hours to allow the jelly to set.
- 23. Unmold the finished jelly onto a plate for serving.
- 24. Carefully remove the plastic wrap.
- 25. Serve the jelly with vanilla sauce on the side, if desired.
