  1. 1. Soak the gelatin leaves in a bowl of cold water.
  2. 2. Combine the sugar with 200 milliliters of water and the lemon zest in a pot.
  3. 3. Let the mixture simmer for about 10 minutes until it thickens to a syrupy consistency.
  4. 4. Remove the lemon zest from the syrup.
  5. 5. Take the pot off the heat.
  6. 6. Squeeze the soaked gelatin well to remove excess water.
  7. 7. Warm the gelatin in a small pot until it is completely melted.
  8. 8. Stir the melted gelatin into the cooled syrup.
  9. 9. Let the gelatin-syrup mixture cool down briefly.
  10. 10. Wash the berries thoroughly.
  11. 11. Remove any stems or leaves from the berries.
  12. 12. Sort the berries to remove unripe or damaged pieces.
  13. 13. Decide whether to leave the strawberries whole or halve them, depending on their size.
  14. 14. Scoop small balls out of the melon flesh.
  15. 15. Add the melon balls to the other berries.
  16. 16. Line a bundt cake pan (or a similar mold) with plastic wrap.
  17. 17. Fill the prepared fruits into the lined mold.
  18. 18. Mix the sparkling wine with the cooled gelatin-syrup mixture.
  19. 19. Pour the liquid over the fruits in the mold.
  20. 20. Ensure that all fruits are completely covered with the liquid.
  21. 21. Cover the mold with plastic wrap.
  22. 22. Place the mold in the refrigerator for at least 4 hours to allow the jelly to set.
  23. 23. Unmold the finished jelly onto a plate for serving.
  24. 24. Carefully remove the plastic wrap.
  25. 25. Serve the jelly with vanilla sauce on the side, if desired.
