🍳 Sweet Apricot Rolls

Ingredients
- 150 ml carrot juice
- 2 tbsp honey
- 3 tbsp rapeseed oil
- 100 g soft dried apricots (soft apricots; 6 dried, soft apricots)
- 150 g wheat flour Type 1050
- 100 g fine oat flakes
- 0.5 packet dry yeast
- 1 pinch salt
Instructions
- 1. Warm up the carrot juice in a small pot.
- 2. Dissolve the honey in the warm juice.
- 3. Stir the oil into the juice-honey mixture.
- 4. Chop the apricots into small pieces.
- 5. Mix flour, oat flakes, and yeast in a large mixing bowl.
- 6. Pour the lukewarm carrot juice mixture over the dry ingredients.
- 7. Add the chopped apricots to the bowl.
- 8. Salt the dough.
- 9. Knead everything using the dough hooks of a hand mixer.
- 10. Continue kneading until the dough feels elastic.
- 11. If necessary, add a little more liquid, as the dough will swell further.
- 12. Cover the bowl.
- 13. Let the dough rise in a warm place for about 30 minutes.
- 14. Line a baking tray with baking paper.
- 15. Knead the risen dough thoroughly again.
- 16. Lightly dust the work surface with flour.
- 17. Lightly dust your hands with flour as well.
- 18. Shape the dough into a thick roll.
- 19. Cut off 12 equal portions from the roll.
- 20. Shape each portion into a round roll.
- 21. Place the rolls on the prepared baking tray.
- 22. Let the rolls rise again for 15 minutes.
- 23. Brush the rolls with a little water.
- 24. Preheat the oven to 200 °C (180 °C for fan-assisted or gas mark 3).
- 25. Bake the rolls on the middle rack for 12 to 15 minutes.
- 26. Let the finished rolls cool on a wire rack.
