  1. 1. Peel and finely chop garlic and ginger. Mix soy sauce, vinegar, Sambal Oelek, garlic, and ginger. Clean, wash, and slice spring onions diagonally into rings and/or fine strips. Drain pineapple and cut into small cubes.
  2. 2. Set aside some green spring onion rings and sauté the rest in hot oil for 2 minutes. Add pineapple pieces and juice along with the prepared sauce, stir well, bring to a brief boil, and season with sugar.
  3. 3. Cut the fish fillets into pieces and season with salt and lemon juice.
  4. 4. For the batter, mix both types of flour with a pinch of salt. Separate the eggs and beat the egg whites until stiff. Combine the flour with the egg yolks and white wine to form a thick batter, then fold in the egg whites and remaining coriander.
  5. 5. Dip the fish pieces in the batter and deep-fry in hot oil for 3 to 4 minutes. Drain the fried fish pieces briefly on kitchen paper and serve hot with the sweet and sour sauce. Serve with rice.
