🍽️ Sweet and Sour Fish Fillet

Ingredients
- 600 g cod fillet
- 1 lemon (juice squeezed)
- salt
- freshly ground pepper
- 50 g cornstarch
- 50 g wheat flour
- 2 eggs
- 0.125 l white wine
- oil (for deep frying)
- 2 garlic cloves
- 1 small piece ginger
- 4 tbsp light soy sauce
- 4 tbsp sweet soy sauce
- 5 tbsp white wine vinegar
- 0.5 tsp sambal oelek
- 1 bunch spring onions
- 150 g pineapple (from the can)
- 1 tsp sugar
- 2 tbsp oil
Instructions
- 1. Peel and finely chop garlic and ginger. Mix soy sauce, vinegar, Sambal Oelek, garlic, and ginger. Clean, wash, and slice spring onions diagonally into rings and/or fine strips. Drain pineapple and cut into small cubes.
- 2. Set aside some green spring onion rings and sauté the rest in hot oil for 2 minutes. Add pineapple pieces and juice along with the prepared sauce, stir well, bring to a brief boil, and season with sugar.
- 3. Cut the fish fillets into pieces and season with salt and lemon juice.
- 4. For the batter, mix both types of flour with a pinch of salt. Separate the eggs and beat the egg whites until stiff. Combine the flour with the egg yolks and white wine to form a thick batter, then fold in the egg whites and remaining coriander.
- 5. Dip the fish pieces in the batter and deep-fry in hot oil for 3 to 4 minutes. Drain the fried fish pieces briefly on kitchen paper and serve hot with the sweet and sour sauce. Serve with rice.
