🍽️ sweet-sour pickled melon

Ingredients
- 1 Charentais melon
- 1 net melon
- 500 ml dry white wine
- 300 g honey
- 75 ml vinegar essence (25 % acidity)
- 3 star anise
- 8 cloves
- 150 g fresh ginger
Instructions
- 1. Cut the melons in half, remove the seeds, and scoop out the flesh with a melon baller. Bring 250 ml water together with white wine, honey, vinegar, and the spices to a boil. Slice the ginger into thin slices and add them.
- 2. Let the melon balls steep in the broth for about 5 minutes over low heat, then remove them and fill them into jars that have been rinsed with hot water beforehand.
- 3. Bring the broth to a boil again and pour it hot over the melon balls.
- 4. Seal the jars tightly immediately and turn them upside down for about 20 minutes, then turn them right side up and let them cool completely.
