  1. 1. Cut the melons in half, remove the seeds, and scoop out the flesh with a melon baller. Bring 250 ml water together with white wine, honey, vinegar, and the spices to a boil. Slice the ginger into thin slices and add them.
  2. 2. Let the melon balls steep in the broth for about 5 minutes over low heat, then remove them and fill them into jars that have been rinsed with hot water beforehand.
  3. 3. Bring the broth to a boil again and pour it hot over the melon balls.
  4. 4. Seal the jars tightly immediately and turn them upside down for about 20 minutes, then turn them right side up and let them cool completely.
