  1. 1. Peel the ginger and slice it into very thin pieces.
  2. 2. Place the ginger slices, sugar, and about 125 milliliters of water in a pot.
  3. 3. Let the mixture simmer on low heat for about 10 minutes until it thickens slightly.
  4. 4. Stir the vinegar and lime juice into the syrup mixture.
  5. 5. Let the syrup cool down, then remove the ginger slices.
  6. 6. Peel the mango and cut the flesh away from the pit.
  7. 7. Cut the mango flesh into small, bite-sized pieces.
  8. 8. Remove the seeds from both melons.
  9. 9. Cut the melon flesh out of the rind and dice it.
  10. 10. Rinse the mint and shake it dry.
  11. 11. Cut the mint leaves into thin strips.
  12. 12. Mix the fruit, the cooled syrup, and the mint strips in a large bowl.
  13. 13. Let the salad sit for at least 15 minutes to allow the flavors to meld.
  14. 14. Drizzle some sweet wine over the salad.
  15. 15. Grind fresh pepper over it and sprinkle with a little salt.
  16. 16. Serve the salad immediately.
