🍰 Sweet stuffed tomatoes with vanilla ice cream

Ingredients
- 8 vine tomatoes
- 1 vanilla pod
- 3 tbsp lemon juice
- 1 tbsp diced candied orange peel
- 1 tbsp raisins
- 60 g Amaretti cookies
- 1 small apple
- 1 small pear
- cinnamon
- 8 tsp honey
- 40 g melted butter
- 1 tbsp powdered sugar
- 4 scoops vanilla ice cream
Instructions
- 1. Cut a cross into the bottom of the tomatoes.
- 2. Pour boiling water over the tomatoes for one minute.
- 3. Immediately shock the tomatoes in cold water.
- 4. Peel the skin off the tomatoes.
- 5. Cut the lid off the top of one tomato.
- 6. Carefully hollow out the tomato using a melon baller.
- 7. Let the hollowed tomatoes drain on kitchen paper.
- 8. Slice the vanilla pod lengthwise.
- 9. Scrape out the vanilla pod seeds.
- 10. Mix the vanilla seeds with the lemon juice.
- 11. Cut the empty vanilla pod into eight pieces.
- 12. Set aside the vanilla pod pieces.
- 13. Finely chop the candied orange peel and raisins.
- 14. Crumble the amaretti cookies.
- 15. Quarter the apple and the pear.
- 16. Core the fruit.
- 17. Peel the fruit.
- 18. Dice the fruit finely.
- 19. Mix the chopped candied orange peel, raisins, amaretti, fruit, cinnamon, and lemon juice.
- 20. Carefully fill the fruit mixture into the tomatoes.
- 21. Drizzle the stuffed tomatoes with honey.
- 22. Place the tomato lid back on.
- 23. Insert a piece of vanilla pod into the center of the filling.
- 24. Put the butter into a baking dish.
- 25. Place the tomatoes in the dish.
- 26. Preheat the oven to 180 degrees (Gas: 2-3, Fan: 160 degrees).
- 27. Bake the tomatoes for about 10 minutes.
- 28. Plate two tomatoes on each plate.
- 29. Dust the tomatoes with powdered sugar and cinnamon.
- 30. Serve the tomatoes with vanilla ice cream.
