  1. 1. Preheat the oven to 180 degrees Celsius. Set the heating mode to top and bottom heat.
  2. 2. Wash the duck thoroughly and pat it dry inside and out with kitchen paper.
  3. 3. Season the duck generously inside and out with salt and pepper.
  4. 4. Stuff the inside of the duck with the fresh thyme sprigs and half of the basil leaves.
  5. 5. Securely close the opening of the duck using toothpicks.
  6. 6. Place the duck in a roasting pan with the breast side facing down.
  7. 7. Pour a small splash of water into the roasting pan.
  8. 8. Roast the duck in the preheated oven for about 30 minutes.
  9. 9. Baste the duck occasionally with the pan juices during the roasting time.
  10. 10. Add a little more water to the roasting pan if necessary to prevent it from drying out.
  11. 11. Peel the apples and cut them into quarters.
  12. 12. Remove the core from the apple quarters and cut them into wedges.
  13. 13. Peel the onions, celery stalks, and garlic cloves.
  14. 14. Cut the onions into wedges.
  15. 15. Cut the celery into small cubes.
  16. 16. Turn the duck over so the breast side is facing up after 30 minutes.
  17. 17. Skim off the excess fat from the roasting pan.
  18. 18. Pour a small splash of white wine into the roasting pan.
  19. 19. Let the duck cook in the oven for another 30 minutes.
  20. 20. Add the remaining white wine gradually.
  21. 21. Baste the duck repeatedly with the liquid from the pan.
  22. 22. Skim off the fat that has risen to the surface again.
  23. 23. Distribute the apple pieces, celery cubes, onion wedges, and garlic cloves around the duck in the pan.
  24. 24. Season the vegetables with salt and pepper.
  25. 25. Let everything cook for another 30 to 45 minutes.
  26. 26. Increase the oven temperature to 220 degrees Celsius.
  27. 27. Brush the surface of the duck with honey.
  28. 28. Sprinkle the remaining fresh basil over the apple and vegetable mixture.
  29. 29. Roast the duck for 5 to 10 minutes until it is golden brown.
