🍽️ Crispy Roast Duck Pieces with Apples, Onions, and Herbs

Ingredients
- 1 duck (approx. 2,2 kg)
- salt
- pepper (from the mill)
- 6 sprigs thyme
- 8 stems basil
- 4 apples
- 4 onions
- 400 g celeriac
- 2 garlic cloves
- 250 ml dry white wine
- 2 tbsp honey
Instructions
- 1. Preheat the oven to 180 degrees Celsius. Set the heating mode to top and bottom heat.
- 2. Wash the duck thoroughly and pat it dry inside and out with kitchen paper.
- 3. Season the duck generously inside and out with salt and pepper.
- 4. Stuff the inside of the duck with the fresh thyme sprigs and half of the basil leaves.
- 5. Securely close the opening of the duck using toothpicks.
- 6. Place the duck in a roasting pan with the breast side facing down.
- 7. Pour a small splash of water into the roasting pan.
- 8. Roast the duck in the preheated oven for about 30 minutes.
- 9. Baste the duck occasionally with the pan juices during the roasting time.
- 10. Add a little more water to the roasting pan if necessary to prevent it from drying out.
- 11. Peel the apples and cut them into quarters.
- 12. Remove the core from the apple quarters and cut them into wedges.
- 13. Peel the onions, celery stalks, and garlic cloves.
- 14. Cut the onions into wedges.
- 15. Cut the celery into small cubes.
- 16. Turn the duck over so the breast side is facing up after 30 minutes.
- 17. Skim off the excess fat from the roasting pan.
- 18. Pour a small splash of white wine into the roasting pan.
- 19. Let the duck cook in the oven for another 30 minutes.
- 20. Add the remaining white wine gradually.
- 21. Baste the duck repeatedly with the liquid from the pan.
- 22. Skim off the fat that has risen to the surface again.
- 23. Distribute the apple pieces, celery cubes, onion wedges, and garlic cloves around the duck in the pan.
- 24. Season the vegetables with salt and pepper.
- 25. Let everything cook for another 30 to 45 minutes.
- 26. Increase the oven temperature to 220 degrees Celsius.
- 27. Brush the surface of the duck with honey.
- 28. Sprinkle the remaining fresh basil over the apple and vegetable mixture.
- 29. Roast the duck for 5 to 10 minutes until it is golden brown.
