  1. 1. Preheat the oven to 180 degrees Celsius. Set the heating mode to top and bottom heat.
  2. 2. Rinse the chickens briefly and pat them dry with a kitchen towel.
  3. 3. Season the inside of the chickens with salt and pepper.
  4. 4. Place the chickens in a greased baking dish. Make sure the breast side is facing up.
  5. 5. Peel the onion and cut it into small cubes.
  6. 6. Wash the apple, cut it into quarters, and remove the core.
  7. 7. Cut the apple flesh into small cubes as well.
  8. 8. Break the cinnamon stick into smaller pieces.
  9. 9. Rinse the lemon balm, shake it dry, and strip the leaves from the stems.
  10. 10. Roughly chop the lemon balm leaves.
  11. 11. Heat the butter in a small saucepan.
  12. 12. Add half of the chopped lemon balm, the paprika powder, the cinnamon pieces, salt, and pepper to the butter.
  13. 13. Brush the chickens with this spice-butter mixture.
  14. 14. Sprinkle the chopped apples and onions over the chickens.
  15. 15. Roast the chickens in the oven for about 40 minutes until golden brown.
  16. 16. Take the chickens out of the oven.
  17. 17. Sprinkle them with the remaining fresh lemon balm.
  18. 18. Serve the dish immediately.
