  1. 1. Cut the ostrich meat into small cubes.
  2. 2. Season the meat cubes with pepper.
  3. 3. Wash the bell peppers thoroughly.
  4. 4. Remove the stem and the inside of the bell peppers.
  5. 5. Cut the bell peppers into bite-sized pieces.
  6. 6. Peel the potatoes.
  7. 7. Cut the potatoes into approx. 1.5 cm cubes.
  8. 8. Wash the chili peppers.
  9. 9. Cut the chili peppers lengthwise.
  10. 10. Remove the seeds and white skin of the chili peppers.
  11. 11. Dice the chili peppers finely.
  12. 12. Peel the onion.
  13. 13. Cut the onion into coarse cubes.
  14. 14. Peel the garlic.
  15. 15. Press the garlic.
  16. 16. Peel the carrot.
  17. 17. Grate the carrot very finely.
  18. 18. Drain the beans.
  19. 19. Heat the ghee in a large pot.
  20. 20. Fry the meat in the pot.
  21. 21. Add the onions and garlic.
  22. 22. Sauté the vegetables briefly.
  23. 23. Add the bell peppers, potatoes, and carrot.
  24. 24. Add the chili peppers.
  25. 25. Add the beans.
  26. 26. Add the broth.
  27. 27. Let the goulash simmer on medium heat for approx. 30 minutes.
  28. 28. Season the goulash to taste.
  29. 29. Serve the goulash with fresh white bread.
