🍽️ Ostrich Vegetable Goulash

Ingredients
- 500 g Ostrich steak
- 400 g Potatoes (waxy)
- 2 Bell peppers
- 1 Chili pepper (red)
- 1 Onion
- 1 Garlic clove
- 1 Carrot
- 1 can Kidney beans
- 2 sprigs Thyme
- 2 Bay leaves
- 250 ml Rosé wine
- 600 ml Vegetable broth
- Thickener (light, to taste)
- Pepper
- Salt
- Chili peppers (hot)
- 3 tbsp Ghee
Instructions
- 1. Cut the ostrich meat into small cubes.
- 2. Season the meat cubes with pepper.
- 3. Wash the bell peppers thoroughly.
- 4. Remove the stem and the inside of the bell peppers.
- 5. Cut the bell peppers into bite-sized pieces.
- 6. Peel the potatoes.
- 7. Cut the potatoes into approx. 1.5 cm cubes.
- 8. Wash the chili peppers.
- 9. Cut the chili peppers lengthwise.
- 10. Remove the seeds and white skin of the chili peppers.
- 11. Dice the chili peppers finely.
- 12. Peel the onion.
- 13. Cut the onion into coarse cubes.
- 14. Peel the garlic.
- 15. Press the garlic.
- 16. Peel the carrot.
- 17. Grate the carrot very finely.
- 18. Drain the beans.
- 19. Heat the ghee in a large pot.
- 20. Fry the meat in the pot.
- 21. Add the onions and garlic.
- 22. Sauté the vegetables briefly.
- 23. Add the bell peppers, potatoes, and carrot.
- 24. Add the chili peppers.
- 25. Add the beans.
- 26. Add the broth.
- 27. Let the goulash simmer on medium heat for approx. 30 minutes.
- 28. Season the goulash to taste.
- 29. Serve the goulash with fresh white bread.
