🍽️ Crispy Spritzgebäck Rings

Ingredients
- 0.25 milk
- 100 g butter
- 2 tbsp sugar
- 1 packet vanilla sugar
- 1 pinch salt
- 150 g flour
- 4 eggs
- 750 g clarified butter (for frying)
- 4 tbsp powdered sugar (for dusting)
Instructions
- 1. Put milk, butter, salt, and sugar into a pot.
- 2. Heat the mixture until it comes to a boil once.
- 3. Remove the pot from the heat and stir in the flour thoroughly.
- 4. Place the pot back on low heat and keep stirring until a dough ball forms.
- 5. Transfer the dough into a bowl.
- 6. Beat the eggs into the dough one by one.
- 7. Stir until the dough is very smooth and pliable.
- 8. Cut baking paper into squares with a side length of 20 cm.
- 9. Brush the paper squares thinly with butter.
- 10. Fill the dough into a piping bag.
- 11. Pipe rings onto the prepared paper pieces.
- 12. Heat ghee (clarified butter) in a tall pot.
- 13. Test the temperature by holding a wooden stick in the fat; small bubbles should form.
- 14. Hold a paper piece with a ring upside down over the hot fat.
- 15. Let the dough slide gently into the fat.
- 16. Fry the spritzgebäck in batches for about 4 minutes on both sides until golden yellow.
- 17. Remove the finished cakes one by one with a slotted spoon.
- 18. Let them drain on kitchen paper.
- 19. Dust the warm cakes generously with powdered sugar before serving.
