🍰 Chocolate-Coated Stollen Cubes

Ingredients
- 200 g dark chocolate
- 40 pieces orange, sugared fruit gummies (in star shape)
- 250 g flour
- 21 g fresh yeast (1/2 cube)
- 60 ml lukewarm milk
- 3 tbsp sugar
- 1 pinch salt
- 1 packet vanilla sugar
- grated lemon zest
- 120 g butter
- 50 g orange peel
- 50 g raisins
- 50 g dried cranberries
- 50 g lemon peel
- 50 g chopped almond kernels
Instructions
- 1. Sift the flour into a large bowl.
- 2. Make a well in the center of the flour.
- 3. Crumble the yeast into the well.
- 4. Mix the yeast with a little milk and some flour from the edges.
- 5. Let the mixture rise covered for 30 minutes.
- 6. Knead the starter with the remaining milk, flour, sugar, salt, vanilla sugar, lemon zest, butter, fruits, and nuts into a smooth dough.
- 7. Let the dough rest covered for another 30 minutes.
- 8. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 9. Line a baking sheet with baking paper.
- 10. Roll out the dough on the tray to a thickness of about 2 to 3 centimeters.
- 11. Bake the dough in the preheated oven for about 25 minutes.
- 12. Cut the still warm dough into cubes.
- 13. Chop the chocolate coating roughly.
- 14. Melt the coating over a hot, but not boiling, water bath.
- 15. Coat the stollen cubes with the melted coating.
- 16. Place one fruit gum star on each cube.
- 17. Let the cubes dry.
- 18. Serve the stollen confectionery on a platter.
