  1. 1. Sift the flour into a large bowl.
  2. 2. Make a well in the center of the flour.
  3. 3. Crumble the yeast into the well.
  4. 4. Mix the yeast with a little milk and some flour from the edges.
  5. 5. Let the mixture rise covered for 30 minutes.
  6. 6. Knead the starter with the remaining milk, flour, sugar, salt, vanilla sugar, lemon zest, butter, fruits, and nuts into a smooth dough.
  7. 7. Let the dough rest covered for another 30 minutes.
  8. 8. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  9. 9. Line a baking sheet with baking paper.
  10. 10. Roll out the dough on the tray to a thickness of about 2 to 3 centimeters.
  11. 11. Bake the dough in the preheated oven for about 25 minutes.
  12. 12. Cut the still warm dough into cubes.
  13. 13. Chop the chocolate coating roughly.
  14. 14. Melt the coating over a hot, but not boiling, water bath.
  15. 15. Coat the stollen cubes with the melted coating.
  16. 16. Place one fruit gum star on each cube.
  17. 17. Let the cubes dry.
  18. 18. Serve the stollen confectionery on a platter.
