  1. 1. Dice the apricots and cherries into small cubes.
  2. 2. Combine the fruit with the raisins, currants, citron, orange peel, and rum in a bowl.
  3. 3. Cover the bowl and let the fruit mixture steep for about two hours.
  4. 4. Mix the flour with the baking powder in a large mixing bowl.
  5. 5. Add the vanilla bean seeds, sugar, salt, gingerbread spice, eggs, butter, and quark (a type of fresh cheese) to the flour mixture.
  6. 6. Knead everything into a smooth dough using the dough hooks of an electric hand mixer.
  7. 7. Add the almonds and the rum-soaked fruits to the dough.
  8. 8. Lightly flour your work surface and knead the ingredients together briefly by hand.
  9. 9. Divide the dough into three equal portions.
  10. 10. Shape each portion into a roll about 15 centimeters long.
  11. 11. Flatten the center of each roll slightly with a rolling pin.
  12. 12. Fold one half of the dough over the other and press the edges slightly to seal.
  13. 13. Place the stollens on a baking sheet lined with baking paper.
  14. 14. Preheat the oven to 250 degrees Celsius.
  15. 15. Place the stollens in the center of the oven.
  16. 16. Immediately reduce the temperature to 175 degrees Celsius after placing them in the oven.
  17. 17. Bake the stollens for about 40 to 45 minutes.
  18. 18. Remove the finished stollens from the oven.
  19. 19. Melt the butter in a small saucepan.
  20. 20. Brush the still-hot stollens with the melted butter.
  21. 21. Dust the stollens with half of the powdered sugar.
  22. 22. Let the stollens cool down completely.
  23. 23. Dust the cooled stollens with the remaining powdered sugar.
