🍰 Mini Stollen Bites

Ingredients
- 150 g raisins
- 50 ml rum
- 40 g citron peel
- 40 g orange peel
- 100 g ground almond kernels
- bitter almond flavoring
- 2 tbsp vanilla sugar
- 1 pinch mace flower
- 1 pinch clove (ground)
- 0.5 untreated lemon (zest and juice)
- 250 g flour
- 0.5 cube fresh yeast (21 g)
- 50 g sugar
- 60 ml lukewarm milk
- 200 g soft butter
- 1 pinch salt
- flour (for working)
- powdered sugar (for dusting)
Instructions
- 1. Soak the raisins in rum.
- 2. Finely chop the candied lemon peel and candied orange peel.
- 3. Mix the raisins, chopped candied lemon peel, chopped candied orange peel, almonds, almond flavoring, vanilla sugar, ground nutmeg, ground cloves, lemon juice, and lemon zest together in a bowl.
- 4. Put the flour in a separate bowl and make a well in the center.
- 5. Crumble the yeast into the well.
- 6. Stir the yeast with the sugar and the milk.
- 7. Let the yeast mixture rise, covered, for about 30 minutes.
- 8. Add 150 grams of butter in pieces, the salt, and the nut mixture to the yeast mixture.
- 9. Knead everything into a smooth dough.
- 10. Roll the dough into a rectangle on a floured work surface.
- 11. Place the dough on a small baking sheet lined with baking paper (approx. 30x20 cm).
- 12. Press the dough evenly flat to the edges.
- 13. Let the dough rise, covered, for another 30 minutes.
- 14. Preheat the oven to 200°C (convection not recommended, please use top and bottom heat).
- 15. Bake the stollen dough in the oven for approx. 40 minutes until golden brown.
- 16. Take the dough out of the oven.
- 17. Brush the hot dough with the remaining butter.
- 18. Let the dough cool completely.
- 19. Dust the cooled dough with powdered sugar.
- 20. Cut the dough into cubes.
- 21. Enjoy the stollen bites.
