  1. 1. Soak the raisins in rum.
  2. 2. Finely chop the candied lemon peel and candied orange peel.
  3. 3. Mix the raisins, chopped candied lemon peel, chopped candied orange peel, almonds, almond flavoring, vanilla sugar, ground nutmeg, ground cloves, lemon juice, and lemon zest together in a bowl.
  4. 4. Put the flour in a separate bowl and make a well in the center.
  5. 5. Crumble the yeast into the well.
  6. 6. Stir the yeast with the sugar and the milk.
  7. 7. Let the yeast mixture rise, covered, for about 30 minutes.
  8. 8. Add 150 grams of butter in pieces, the salt, and the nut mixture to the yeast mixture.
  9. 9. Knead everything into a smooth dough.
  10. 10. Roll the dough into a rectangle on a floured work surface.
  11. 11. Place the dough on a small baking sheet lined with baking paper (approx. 30x20 cm).
  12. 12. Press the dough evenly flat to the edges.
  13. 13. Let the dough rise, covered, for another 30 minutes.
  14. 14. Preheat the oven to 200°C (convection not recommended, please use top and bottom heat).
  15. 15. Bake the stollen dough in the oven for approx. 40 minutes until golden brown.
  16. 16. Take the dough out of the oven.
  17. 17. Brush the hot dough with the remaining butter.
  18. 18. Let the dough cool completely.
  19. 19. Dust the cooled dough with powdered sugar.
  20. 20. Cut the dough into cubes.
  21. 21. Enjoy the stollen bites.
