🍽️ Grilled Sturgeon in Banana Leaves

Ingredients
- 4 banana leaves
- 2 tbsp olive oil
- 4 sturgeon fillets (approx. 180 g each)
- 1 unwaxed lemon
- 1 red chili pepper
- sea salt
Instructions
- 1. Rinse the banana leaves under running water.
- 2. Dry the leaves thoroughly with a kitchen towel.
- 3. Brush the leaves lightly with some oil.
- 4. Rinse the sturgeon under running water.
- 5. Pat the fish dry carefully with kitchen paper.
- 6. Place the sturgeon in the center of a prepared banana leaf.
- 7. Wash the lemon under hot water.
- 8. Dry the lemon.
- 9. Peel the lemon skin into fine strips (zest).
- 10. Squeeze the juice out of the lemon.
- 11. Wash the chili pepper.
- 12. Cut the chili pepper in half lengthwise.
- 13. Remove the seeds and white pith from the chili.
- 14. Cut the chili into very fine strips.
- 15. Drizzle the lemon juice over the fish.
- 16. Season the fish with salt.
- 17. Distribute the lemon zest and chili strips on the fish.
- 18. Drizzle the remaining oil over everything.
- 19. Fold the banana leaf around the fish.
- 20. Seal the package so that a small packet is formed.
- 21. Secure the packet with toothpicks.
- 22. Place the packets on the grill.
- 23. Grill the packets for 12 to 15 minutes.
- 24. Turn the packets regularly while grilling.
- 25. Serve the sturgeon directly in the banana leaf.
