🍽️ Potato dumplings with crispy toast cubes

Ingredients
- 1 kg potatoes (floury)
- 50 g flour
- 2 eggs
- 4 tbsp flour
- 2 tbsp parsley (chopped)
- 2 slices toast bread
- 2 tbsp butter
- salt
- nutmeg (freshly grated)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Steam the potatoes for about 30 minutes until they are soft.
- 3. Cut off the crusts from the toast slices.
- 4. Cut the toast slices into small cubes.
- 5. Fry the toast cubes in hot butter until golden brown.
- 6. Place the toast cubes on kitchen paper to drain the fat.
- 7. Peel the cooked potatoes.
- 8. Press the potatoes through a potato ricer.
- 9. Let the potatoes steam for a short while.
- 10. Finely chop the parsley.
- 11. Mix the potatoes with flour, eggs, and the parsley.
- 12. Knead the ingredients into a smooth dough.
- 13. If the dough is too wet, add a little more flour.
- 14. Season the dough with salt and nutmeg.
- 15. Form tennis ball-sized balls from the dough.
- 16. Press the dumplings slightly flat.
- 17. Place a few toast cubes in the center of the dumplings.
- 18. Reshape the dumplings into balls and seal them.
- 19. Put the dumplings into boiling salted water.
- 20. Cook the dumplings for about 25 minutes.
