  1. 1. Mound the flour, sugar, vanilla sugar, and lemon zest on your work surface.
  2. 2. Make a well in the center of the flour mixture.
  3. 3. Place the egg into the well.
  4. 4. Arrange the butter in small pieces around the egg.
  5. 5. Process everything with a large knife until it forms a crumbly mixture.
  6. 6. Quickly knead the crumbly mixture with your hands to form a dough.
  7. 7. Wrap the dough in plastic wrap.
  8. 8. Store the dough in the refrigerator or in a cool place between 0 and 10 degrees Celsius for about 30 minutes.
  9. 9. Press the dough slightly flat on a floured work surface.
  10. 10. Roll out the dough to a thickness of about 3 to 4 millimeters.
  11. 11. Lift the dough from the surface with a spatula as needed.
  12. 12. Cut out 10 boot shapes from the dough.
  13. 13. Cut or stamp small leaf-shaped cookies from the remaining dough.
  14. 14. Place the boots and leaves on a baking sheet.
  15. 15. Preheat the oven to 180 degrees Celsius.
  16. 16. Bake the cookies in the preheated oven for 10 to 12 minutes.
  17. 17. Remove the cookies from the oven while still warm.
  18. 18. Place the warm cookies on a wire rack using a spatula.
  19. 19. Allow the cookies to cool completely.
  20. 20. Mix powdered sugar with lemon juice to create a glaze.
  21. 21. Brush the cooled boots with the glaze.
  22. 22. Fill the remaining glaze into a small piping bag.
  23. 23. Decorate the boots and leaf cookies with the glaze.
  24. 24. Optionally decorate the cookies with sugar pearls.
