  1. 1. Preheat the oven to 180 degrees Celsius.
  2. 2. Separate the eggs by separating the yolks from the whites.
  3. 3. Grind the almonds finely.
  4. 4. Beat half of the powdered sugar together with the egg yolks until white and foamy.
  5. 5. Mix the ground almonds with flour, chocolate sprinkles, lemon zest, cinnamon, gingerbread spice, and vanilla sugar.
  6. 6. Fold the dry mixture into the egg yolk-sugar mixture.
  7. 7. Beat the egg whites with the remaining powdered sugar until very stiff.
  8. 8. Fold the stiffly beaten egg whites into the almond mixture.
  9. 9. Grease a star-shaped mold with a diameter of about 28 centimeters.
  10. 10. Coat the mold with breadcrumbs.
  11. 11. Pour the batter into the mold.
  12. 12. Bake the cake for about 50 to 60 minutes.
  13. 13. Take the cake out of the oven.
  14. 14. Let the cake cool on a wire rack.
  15. 15. Stir powdered sugar with lemon juice to form a thick glaze.
  16. 16. Pour the glaze over the cooled cake.
  17. 17. Garnish the cake with chocolate cookies.
  18. 18. Melt the chocolate coating in a double boiler.
  19. 19. Spread the melted chocolate coating thinly onto a marble slab using a palette knife.
  20. 20. Quickly scrape the set chocolate into curls using a kitchen spatula.
  21. 21. Sprinkle the center of the cake with the chocolate curls.
  22. 22. Beat the cream with cream stabilizer and vanilla sugar until stiff.
  23. 23. Mix the apples with lemon juice.
  24. 24. Fold the apples into the whipped cream.
  25. 25. Cut the cake into pieces.
  26. 26. Serve the cake pieces with the apple cream.
