🍰 Star-shaped spice cake with apple cream

Ingredients
- 300 g almond kernels
- 80 g flour
- 3 tbsp chocolate sprinkles
- 8 eggs
- 250 g powdered sugar
- 1 lemon (organic, zest)
- 1 pinch cinnamon
- 1 tsp gingerbread spice
- 1 packet vanilla sugar
- breadcrumbs (for the pan)
- 250 g powdered sugar
- 2 tbsp lemon juice
- 8 chocolate cookies
- 50 g chocolate coating
- 200 g whipping cream
- 2 packet cream stabilizer
- 1 packet vanilla sugar
- 1 apple (peeled, finely grated)
- 1 tsp lemon juice
Instructions
- 1. Preheat the oven to 180 degrees Celsius.
- 2. Separate the eggs by separating the yolks from the whites.
- 3. Grind the almonds finely.
- 4. Beat half of the powdered sugar together with the egg yolks until white and foamy.
- 5. Mix the ground almonds with flour, chocolate sprinkles, lemon zest, cinnamon, gingerbread spice, and vanilla sugar.
- 6. Fold the dry mixture into the egg yolk-sugar mixture.
- 7. Beat the egg whites with the remaining powdered sugar until very stiff.
- 8. Fold the stiffly beaten egg whites into the almond mixture.
- 9. Grease a star-shaped mold with a diameter of about 28 centimeters.
- 10. Coat the mold with breadcrumbs.
- 11. Pour the batter into the mold.
- 12. Bake the cake for about 50 to 60 minutes.
- 13. Take the cake out of the oven.
- 14. Let the cake cool on a wire rack.
- 15. Stir powdered sugar with lemon juice to form a thick glaze.
- 16. Pour the glaze over the cooled cake.
- 17. Garnish the cake with chocolate cookies.
- 18. Melt the chocolate coating in a double boiler.
- 19. Spread the melted chocolate coating thinly onto a marble slab using a palette knife.
- 20. Quickly scrape the set chocolate into curls using a kitchen spatula.
- 21. Sprinkle the center of the cake with the chocolate curls.
- 22. Beat the cream with cream stabilizer and vanilla sugar until stiff.
- 23. Mix the apples with lemon juice.
- 24. Fold the apples into the whipped cream.
- 25. Cut the cake into pieces.
- 26. Serve the cake pieces with the apple cream.
