  1. 1. Whip the cream until stiff. Beat the egg yolks together with the powdered sugar until frothy in a warm water bath.
  2. 2. Add the chopped chocolate to the warm egg mixture and let it melt. Add the speculoos spice. Let the egg cream cool down and then fold in the whipped cream. Fill the mixture into a greased mold and place it in the freezer for about 5 hours.
  3. 3. Before serving, crumble the speculoos cookies with a rolling pin and mix the crumbs in a bowl with orange juice.
  4. 4. Dip the mold briefly in hot water, invert the ice cream cake onto a plate, sprinkle with the crumbs, and decorate the center with chocolate curls.
