🍽️ Juicy Beef Strips with Creamy Mashed Potatoes

Ingredients
- 6 tbsp olive oil
- thyme (2 tsp each fresh chopped)
- rosemary (2 tsp each fresh chopped)
- 1 tbsp chopped parsley
- 2 garlic cloves
- salt
- pepper (from the mill)
- 1 kg floury potatoes
- salt
- 100 ml milk
- 1 tbsp butter
- 1 onion
- 1 tbsp olive oil
- 1 packet frozen garden herbs of Provence (to taste)
- pepper (freshly grated nutmeg)
- 50 g whipping cream
- 400 g beef fillet
- 2 tbsp ghee
Instructions
- 1. Peel the garlic clove and chop it very finely.
- 2. Put all ingredients for the herb sauce into a blender and puree until smooth.
- 3. Peel the potatoes and cut them into evenly sized pieces.
- 4. Place the potato pieces in a pot with salted water.
- 5. Cook the potatoes over medium heat for about 20 minutes until tender.
- 6. Peel the first onion and chop it finely.
- 7. Heat 1 tablespoon of olive oil in a frying pan.
- 8. Sauté the chopped onion in the hot oil.
- 9. Stir the herbs into the onions.
- 10. Season the mixture with salt, pepper, and grated nutmeg.
- 11. Add 50 grams of cream and stir everything well.
- 12. Drain the cooking water from the potatoes, but save about one cup of it.
- 13. Warm the milk together with the butter in a small saucepan.
- 14. Mash the cooked potatoes into a puree using a potato masher.
- 15. Stir the hot milk-butter mixture into the mashed potatoes.
- 16. Taste the mashed potatoes again and adjust seasoning with salt, pepper, and fresh nutmeg.
- 17. Gently fold the prepared herb mixture into the mashed potatoes.
- 18. Taste the finished puree one last time for final seasoning.
- 19. Brush the beef fillet with some of the herb sauce.
- 20. Sear the meat in a frying pan over high heat.
- 21. Cook it for one minute per side for each centimeter of thickness.
- 22. Wrap the seared meat in aluminum foil.
- 23. Place the foil in the oven preheated to 80 degrees Celsius.
- 24. Let the meat rest in the oven for about 10 minutes.
- 25. Slice the beef fillet into thin strips.
- 26. Serve the beef strips with the remaining herb sauce and the mashed potatoes.
