  1. 1. Peel the garlic clove and chop it very finely.
  2. 2. Put all ingredients for the herb sauce into a blender and puree until smooth.
  3. 3. Peel the potatoes and cut them into evenly sized pieces.
  4. 4. Place the potato pieces in a pot with salted water.
  5. 5. Cook the potatoes over medium heat for about 20 minutes until tender.
  6. 6. Peel the first onion and chop it finely.
  7. 7. Heat 1 tablespoon of olive oil in a frying pan.
  8. 8. Sauté the chopped onion in the hot oil.
  9. 9. Stir the herbs into the onions.
  10. 10. Season the mixture with salt, pepper, and grated nutmeg.
  11. 11. Add 50 grams of cream and stir everything well.
  12. 12. Drain the cooking water from the potatoes, but save about one cup of it.
  13. 13. Warm the milk together with the butter in a small saucepan.
  14. 14. Mash the cooked potatoes into a puree using a potato masher.
  15. 15. Stir the hot milk-butter mixture into the mashed potatoes.
  16. 16. Taste the mashed potatoes again and adjust seasoning with salt, pepper, and fresh nutmeg.
  17. 17. Gently fold the prepared herb mixture into the mashed potatoes.
  18. 18. Taste the finished puree one last time for final seasoning.
  19. 19. Brush the beef fillet with some of the herb sauce.
  20. 20. Sear the meat in a frying pan over high heat.
  21. 21. Cook it for one minute per side for each centimeter of thickness.
  22. 22. Wrap the seared meat in aluminum foil.
  23. 23. Place the foil in the oven preheated to 80 degrees Celsius.
  24. 24. Let the meat rest in the oven for about 10 minutes.
  25. 25. Slice the beef fillet into thin strips.
  26. 26. Serve the beef strips with the remaining herb sauce and the mashed potatoes.
