🍽️ Grilled Porcini Salad with Lemon Dressing

Ingredients
- 250 g medium-sized porcini mushrooms
- 5 tbsp olive oil
- 2 sprigs parsley
- 2 tbsp lemon juice
- 1 tsp honey
- 2 tbsp white wine vinegar
- 2 tbsp vegetable broth
- salt
- pepper (from the mill)
Instructions
- 1. Clean the porcini mushrooms thoroughly.
- 2. Slice the mushrooms into thin, lengthwise pieces.
- 3. Take four plates.
- 4. Brush each plate thinly with olive oil.
- 5. Place the mushroom slices on the plates, slightly overlapping them.
- 6. Rinse the parsley under cold water.
- 7. Shake the parsley dry.
- 8. Pluck the parsley leaves from the stems.
- 9. Put the parsley, the remaining oil, the lemon juice, the honey, the vinegar, and the broth into a blender.
- 10. Blend the mixture into a smooth sauce.
- 11. Season the dressing with salt and pepper.
- 12. Drizzle the dressing over the mushrooms.
- 13. Serve the salad immediately.
