🍽️ Pickling King Boletes Sweet and Sour

Ingredients
- 1 kg porcini mushrooms
- 250 ml water
- 500 ml white wine vinegar
- 3 tbsp sugar
- 1 tsp salt
- 2 bay leaves
- 8 white peppercorns
- 1 tbsp mustard seeds
Instructions
- 1. Rinse the jars thoroughly with very hot water.
- 2. Let the water drain from the jars.
- 3. Fill a large pot with water and bring it to a boil.
- 4. Clean the king boletes thoroughly.
- 5. Keep small mushrooms whole.
- 6. Cut larger mushrooms in half.
- 7. Add the mushrooms to the boiling water.
- 8. Boil the mushrooms for 2 to 4 minutes.
- 9. Pour off the mushrooms and drain them.
- 10. Rinse the mushrooms immediately with cold water.
- 11. Wait until the mushrooms are completely cooled down.
- 12. Let the cooled mushrooms drain well.
- 13. Add water, vinegar, and spices to a pot.
- 14. Bring the liquid to a boil.
- 15. Layer the mushrooms into the prepared jars.
- 16. Pour the boiling liquid immediately over the mushrooms.
- 17. Seal the jars immediately.
- 18. Turn the sealed jars upside down.
- 19. Leave the jars upside down to create a vacuum.
- 20. Wait for about 10 minutes.
- 21. Turn the jars back upright.
- 22. Store the mushrooms in a cool, dark place.
- 23. Consume the mushrooms within approximately 4 weeks.
