🍽️ Mushroom Hare Loin

Ingredients
- 2 garlic cloves
- 500 g porcini mushrooms
- 4 tbsp butter
- 4 tbsp olive oil
- 3 tbsp parsley
- salt
- pepper from the mill
- 2 boned rabbit loins
- 2 tbsp walnut oil
- 1 tbsp sugar
- 50 ml red wine
- 100 g cranberries
Instructions
- 1. Halve the garlic cloves and rub the pan with them. Clean the mushrooms and slice them. Sauté in a mix of butter and oil. Season with parsley, salt, and pepper.
- 2. Season the meat with salt and pepper, sear it in hot walnut oil, and cook gently for 8-10 minutes. Wrap it in aluminum foil and let it rest.
- 3. Let sugar caramelize in the cooking fat. Add red wine to deglaze the pan. Strain the liquid through a sieve, bring it to a boil again, and simmer the cranberries for 1-2 minutes.
- 4. Slice the hare loins and serve them with the mushrooms and sauce.
