  1. 1. Rinse the fish under cold water and pat it dry with a kitchen towel.
  2. 2. Drizzle lemon juice over the fish and season with salt and pepper.
  3. 3. Slice the potatoes into very thin rounds.
  4. 4. Add 2 tablespoons of oil and 2 tablespoons of melted butter to a baking dish.
  5. 5. Brush the fish fillets thinly with cream.
  6. 6. Place the potato slices in an overlapping, shingle-like pattern on top of the fish.
  7. 7. Press the potatoes down slightly so they stick in place.
  8. 8. Brush the potatoes with some oil and season to taste.
  9. 9. Wash the spring onions, trim the ends, and slice them into thin rings.
  10. 10. Scatter the spring onion rings over the dish.
  11. 11. Preheat the oven to 200 degrees Celsius.
  12. 12. Place the baking dish in the oven and bake for 15 to 20 minutes.
  13. 13. Chop fresh chives finely.
  14. 14. Sprinkle the finished dish with chives and serve hot.
