🍲 Hearty Turnip Stew with Beef

Ingredients
- 4 onions
- 1 clove of garlic
- 1 piece celeriac (approx. 200 g)
- 2 tbsp butter (approx. 15 g)
- 800 g beef goulash
- 1 l hot vegetable broth
- 1 bay leaf
- 2 cloves
- 1 tsp dried marjoram
- salt
- pepper
- 1 rutabaga (approx. 700 g)
- 3 carrots
- 0.5 bunch parsley
- 1 piece fresh horseradish (for garnish)
Instructions
- 1. Peel the onion and garlic. Chop both finely.
- 2. Clean, peel, and wash the celery stalk. Cut it into fine cubes.
- 3. Heat the butter in a large pot.
- 4. Fry the onions and celery over high heat for about 5 minutes. Stir and scrape off any browned bits from the bottom of the pot.
- 5. Remove the onions and celery from the pot and set them aside.
- 6. Add the meat to the pot. Fry it over high heat for 5 minutes.
- 7. Add the garlic and fry it together for 1 to 2 minutes.
- 8. Deglaze the meat with 50 ml of broth. Let it simmer for 3 to 4 minutes. Stir occasionally.
- 9. Return the previously removed onions and celery to the pot.
- 10. Pour in the remaining broth.
- 11. Add the bay leaf, cloves, and marjoram. Season with salt and pepper.
- 12. Simmer the stew covered over low heat for about 70 minutes. Stir occasionally.
- 13. Wash the turnip. Peel it. Cut it into approx. 2 x 2 cm cubes.
- 14. Peel the carrots. Wash them. Chop them finely.
- 15. Wash the parsley. Shake it dry. Chop the leaves roughly.
- 16. Add the turnip and carrot cubes to the pot.
- 17. Let the stew simmer covered for another approx. 15 minutes.
- 18. Remove the bay leaf and cloves from the pot.
- 19. Remove the beef and two-thirds of the turnips and carrots using a slotted spoon.
- 20. Blend the remaining soup in the pot finely with an immersion blender.
- 21. Return the removed meat and vegetables to the soup.
- 22. Bring everything to a boil once.
- 23. Peel the horseradish. Grate it finely.
- 24. Season the stew to taste with salt and pepper.
- 25. Serve the stew. Garnish with the grated horseradish and parsley.
