  1. 1. Peel the onion and garlic. Chop both finely.
  2. 2. Clean, peel, and wash the celery stalk. Cut it into fine cubes.
  3. 3. Heat the butter in a large pot.
  4. 4. Fry the onions and celery over high heat for about 5 minutes. Stir and scrape off any browned bits from the bottom of the pot.
  5. 5. Remove the onions and celery from the pot and set them aside.
  6. 6. Add the meat to the pot. Fry it over high heat for 5 minutes.
  7. 7. Add the garlic and fry it together for 1 to 2 minutes.
  8. 8. Deglaze the meat with 50 ml of broth. Let it simmer for 3 to 4 minutes. Stir occasionally.
  9. 9. Return the previously removed onions and celery to the pot.
  10. 10. Pour in the remaining broth.
  11. 11. Add the bay leaf, cloves, and marjoram. Season with salt and pepper.
  12. 12. Simmer the stew covered over low heat for about 70 minutes. Stir occasionally.
  13. 13. Wash the turnip. Peel it. Cut it into approx. 2 x 2 cm cubes.
  14. 14. Peel the carrots. Wash them. Chop them finely.
  15. 15. Wash the parsley. Shake it dry. Chop the leaves roughly.
  16. 16. Add the turnip and carrot cubes to the pot.
  17. 17. Let the stew simmer covered for another approx. 15 minutes.
  18. 18. Remove the bay leaf and cloves from the pot.
  19. 19. Remove the beef and two-thirds of the turnips and carrots using a slotted spoon.
  20. 20. Blend the remaining soup in the pot finely with an immersion blender.
  21. 21. Return the removed meat and vegetables to the soup.
  22. 22. Bring everything to a boil once.
  23. 23. Peel the horseradish. Grate it finely.
  24. 24. Season the stew to taste with salt and pepper.
  25. 25. Serve the stew. Garnish with the grated horseradish and parsley.
