Ingredients
- 4 slices beef tenderloin (each 200g)

- 2 tbsp germ oil
- 1 romaine lettuce
- 3 tbsp germ oil
- 2 tbsp red wine vinegar

Instructions
- 1. Thoroughly wash the leaf salad under running water.
- 2. Pat the vegetables dry with a kitchen towel or use a salad spinner.
- 3. Tear the salad leaves into bite-sized pieces.
- 4. Heat the oil in a heavy pan.
- 5. Place the steaks into the hot fat.
- 6. Sear the meat on high heat for one minute on each side.
- 7. Reduce the heat on the pan.
- 8. Cook the meat slices for two to four minutes per side.
- 9. Adjust the cooking time according to your personal preference.
- 10. Season the cooked steak with salt.
- 11. Remove the steaks from the pan.
- 12. Wrap the meat in aluminum foil.
- 13. Mix the ingredients for the vinaigrette in a bowl.
- 14. Whisk the vinaigrette until it forms a homogeneous sauce.
- 15. Portion the salad onto four plates.
- 16. Drizzle the vinaigrette over the salad.
- 17. Slice the meat into thick pieces.
- 18. Place the meat slices onto the plates.
- 19. Sprinkle croutons over the finished dish.
