🍽️ Juicy Steak Strips with Fresh Mango Chutney

Ingredients
- 4 slices beef tenderloin (each 200 g)
- salt
- freshly ground pepper
- 2 tbsp germ oil
- 2 large ripe mangoes
- 2 spring onions
- 2 tbsp finely chopped coriander leaves
- 6 tbsp lime juice
Instructions
- 1. Heat the oil in a heavy pan over high heat.
- 2. Place the steaks in the hot fat.
- 3. Sear the steaks for 1 minute on each side at the highest heat.
- 4. Reduce the heat to a medium level.
- 5. Cook the meat for 2 to 4 minutes per side, depending on your preferred doneness.
- 6. Season the steaks with salt.
- 7. Remove the steaks from the pan.
- 8. Wrap the steaks in aluminum foil.
- 9. Place the foil packets in the oven at 70 degrees Celsius for 10 to 15 minutes to let the meat rest.
- 10. Peel the mango and cut the flesh away from the pit.
- 11. Cut the mango flesh into small cubes.
- 12. Wash the spring onions and remove the tough ends.
- 13. Slice the spring onions into thin rings.
- 14. Mix the mango cubes, onion rings, and coriander in a bowl.
- 15. Add the lime juice to the mixture.
- 16. Season the salad with salt to taste.
- 17. Slice the rested meat into thick slices.
- 18. Place the meat slices on the plates.
- 19. Add the mango cubes as a topping on the meat.
