🍽️ Juicy Beef Steaks with Creamy Sweet Potato Mash and Pepper Sauce

Ingredients
- 4 Strip Steaks (from the beef loin)
- 200 ml Heavy cream
- 200 ml Beef broth
- 50 g Cheddar
- Salt
- Pepper (from the mill)
- 1 tbsp green peppercorns
- 1 Shallot (chopped)
- 1 Garlic clove (chopped)
- 1 tbsp Oil
- 400 g Broccoli florets
- 800 g Sweet potatoes
- 2 tbsp Butter
- 150 ml Milk
- Nutmeg (ground)
- 2 tbsp Parsley (chopped)
Instructions
- 1. Fill a pot with water and add a generous pinch of salt.
- 2. Bring the salted water to a boil.
- 3. Add the sweet potatoes to the boiling water.
- 4. Cook the sweet potatoes for about 30 minutes until they are tender.
- 5. Peel the garlic clove and the shallot.
- 6. Finely chop the garlic and the shallot.
- 7. Heat oil in a pan.
- 8. Add the garlic, shallot, and crushed peppercorns to the hot pan.
- 9. Sauté the vegetables and spices for a short time until fragrant.
- 10. Deglaze the pan with meat broth.
- 11. Add the cream to the sauce.
- 12. Let the sauce simmer until it has reduced by about half.
- 13. Blend the sauce briefly with a hand blender.
- 14. Stir the grated Cheddar cheese into the warm sauce.
- 15. Season the sauce to taste with salt.
- 16. Peel the cooked sweet potatoes.
- 17. Press the sweet potatoes through a potato ricer into a bowl.
- 18. Add hot milk and butter to the mash.
- 19. Stir the ingredients with a cooking spoon until a creamy mash forms.
- 20. If necessary, add a little more milk to achieve the desired consistency.
- 21. Season the mash with salt and grated nutmeg.
- 22. Fold in the chopped parsley into the mash.
- 23. Fill a pot with salted water and bring it to a boil.
- 24. Add the broccoli florets to the boiling water.
- 25. Cook the broccoli for about 5 minutes until tender (blanching).
- 26. Season the steaks on both sides with salt.
- 27. Season the steaks on both sides with pepper.
- 28. Preheat a grill.
- 29. Place the steaks on the grill.
- 30. Grill the steaks for 4 to 8 minutes, depending on your desired level of doneness.
- 31. Place the cooked broccoli on the plates.
- 32. Add a dollop of sweet potato mash to the plates.
- 33. Place the grilled steaks on the plates.
- 34. Pour the pepper sauce over the steaks.
- 35. Serve the dish immediately.
