  2. 2. Cut the peeled potatoes into small cubes of about one centimeter in size.
  3. 3. Put half of the olive oil into a non-stick pan and heat it.
  4. 4. Fry the potato cubes over medium heat for about ten minutes until golden brown.
  5. 5. Peel the shallots.
  6. 6. Cut the shallots into wedges by dividing them into eighths.
  7. 7. Add the shallot wedges to the potatoes in the pan.
  8. 8. Continue frying the vegetables until the potatoes are still slightly firm.
  9. 9. Season the meat with coarse pepper.
  10. 10. Heat the remaining oil in a second pan, preferably a grill pan.
  11. 11. Sear the meat in the hot oil for two minutes on each side.
  12. 12. Turn off the heat source.
  13. 13. Place a lid on the pan.
  14. 14. Let the meat cook through in the covered pan until it reaches the desired internal temperature (medium or well-done).
  15. 15. Season the finished meat with salt.
  16. 16. Warm the serving plates.
