🍽️ Ostrich Steak with Mushroom and Grape Sauce

Ingredients
- 350 g Porcini mushrooms
- 2 Shallots
- 24 Grapes
- 4 Ostrich steaks (approx. 160 g each)
- Salt
- Pepper (from a mill)
- 2 tbsp Sunflower oil
- 25 g Butter
- 40 ml Calvados
- 150 ml Heavy cream
- 1 tbsp chopped parsley
- Flat-leaf parsley (for garnish)
- Coarse sea salt
Instructions
- 1. Preheat the oven to 200 degrees Celsius fan-forced.
- 2. Clean the mushrooms and cut them into small pieces.
- 3. Peel the shallots and dice them finely.
- 4. Wash the grapes and halve them.
- 5. Remove the seeds from the grapes and peel off the skin.
- 6. Wash the ostrich steaks and pat them dry with kitchen paper.
- 7. Season the steaks generously with salt and pepper.
- 8. Heat oil in a pan and sear the steaks on all sides.
- 9. Place the seared steaks in the preheated oven for about 15 minutes.
- 10. Melt butter in a pan and sauté the diced shallots until translucent.
- 11. Add the sliced porcini mushrooms to the pan.
- 12. Season the mushrooms with salt and pepper.
- 13. Fry the mushrooms for about 5 minutes, turning occasionally, until golden brown.
- 14. Deglaze the pan with Calvados.
- 15. Add the cream and let the sauce simmer for about 5 minutes.
- 16. Add the prepared grapes and the chopped parsley to the sauce.
- 17. Let everything cook for another 1 to 2 minutes.
- 18. Finally, adjust the sauce to taste with salt and pepper.
- 19. Distribute the mushrooms, sauce, and grapes onto the plates.
- 20. Place the cooked ostrich steaks on top of the sauce.
- 21. Garnish the dish with flat-leaf parsley sprigs.
- 22. Sprinkle the steak with coarse sea salt.
