  1. 1. Take the meat out of the fridge one hour before cooking.
  2. 2. Rinse the steak briefly and pat it completely dry with a kitchen towel.
  3. 3. Make a few shallow cuts into the existing fat rim.
  4. 4. Heat ghee in a grill pan.
  5. 5. Place the steak in the hot pan.
  6. 6. Never pierce the meat with a fork.
  7. 7. Sear the steak over high heat for about one to two minutes per side.
  8. 8. Wait until nice sear aromas form and the meat is well browned.
  9. 9. Turn the meat only once using a spatula.
  10. 10. Wrap the steak tightly in aluminum foil.
  11. 11. Preheat the oven.
  12. 12. Set the temperature to 80 degrees Celsius.
  13. 13. Use fan-forced air at 60 degrees Celsius or gas level 1.
  14. 14. Place the wrapped steak into the oven.
  15. 15. Let the meat finish cooking in the oven.
  16. 16. Gently press the tip of your middle finger against your thumb.
  17. 17. Feel the resistance at the base of your thumb.
  18. 18. Now gently press your finger onto the raw steak in the pan.
  19. 19. Compare the resistance of the meat with that of your thumb.
  20. 20. For raw meat (very rare), press only your thumb and index finger together.
  21. 21. For medium rare, press your thumb and middle finger together.
  22. 22. For medium to medium well, press your thumb and ring finger together.
  23. 23. For well done, press your thumb and pinky finger together.
  24. 24. Season the steak with salt and pepper only directly at the table.
