🍽️ Perfect Steak with Custom Doneness

Ingredients
- 1 steak (200 g, at least 3 cm thick)
- 1 tbsp ghee
- salt
- pepper
Instructions
- 1. Take the meat out of the fridge one hour before cooking.
- 2. Rinse the steak briefly and pat it completely dry with a kitchen towel.
- 3. Make a few shallow cuts into the existing fat rim.
- 4. Heat ghee in a grill pan.
- 5. Place the steak in the hot pan.
- 6. Never pierce the meat with a fork.
- 7. Sear the steak over high heat for about one to two minutes per side.
- 8. Wait until nice sear aromas form and the meat is well browned.
- 9. Turn the meat only once using a spatula.
- 10. Wrap the steak tightly in aluminum foil.
- 11. Preheat the oven.
- 12. Set the temperature to 80 degrees Celsius.
- 13. Use fan-forced air at 60 degrees Celsius or gas level 1.
- 14. Place the wrapped steak into the oven.
- 15. Let the meat finish cooking in the oven.
- 16. Gently press the tip of your middle finger against your thumb.
- 17. Feel the resistance at the base of your thumb.
- 18. Now gently press your finger onto the raw steak in the pan.
- 19. Compare the resistance of the meat with that of your thumb.
- 20. For raw meat (very rare), press only your thumb and index finger together.
- 21. For medium rare, press your thumb and middle finger together.
- 22. For medium to medium well, press your thumb and ring finger together.
- 23. For well done, press your thumb and pinky finger together.
- 24. Season the steak with salt and pepper only directly at the table.
