🍽️ Juicy Rump Steak with Creamy Morel Mushroom Sauce

Ingredients
- 50 g dried morels
- 4 rump steaks (kitchen-ready, á 180 g)
- salt
- pepper (from the mill)
- 20 g ghee
- 1 onion
- 1 clove of garlic
- 1 tbsp butter
- 100 ml dry white wine
- 200 ml veal stock
- 40 ml cognac
- 2 tbsp green peppercorns (jar)
- 100 ml whipping cream
- salt
- pepper
- thyme (for garnish)
Instructions
- 1. Place the dried morels in a bowl and cover them with about 200 milliliters of water.
- 2. Let the mushrooms soak in the water for about 30 minutes.
- 3. Strain the morels and reserve the soaking liquid.
- 4. Filter the collected liquid through a fine cloth or coffee filter to remove any sediment.
- 5. Rinse the morels briefly under running water and let them drain well.
- 6. Preheat the oven to 140 degrees Celsius using top and bottom heat.
- 7. Rinse the meat and pat it completely dry with kitchen paper.
- 8. Season the steak generously with salt and pepper.
- 9. Melt ghee in a large pan over high heat.
- 10. Sear the meat on all sides until it forms a brown crust.
- 11. Place the steak in the preheated oven.
- 12. Bake the meat for 5 to 10 minutes, depending on your preferred level of doneness.
- 13. Peel the onion and garlic and dice them finely.
- 14. Melt butter in the pan used for the steak (using the pan drippings).
- 15. Sauté the onion and garlic cubes in the butter for a short time.
- 16. Deglaze the pan with wine, broth, the filtered morel water, and cognac.
- 17. Let the sauce reduce until it has decreased by about half.
- 18. Strain the sauce through a fine sieve into a clean pot.
- 19. Add the drained morels and peppercorns to the sauce.
- 20. Let the sauce simmer gently for about 10 minutes over low heat.
- 21. Whip the cream until it forms stiff peaks.
- 22. Remove a small portion of the hot sauce from the heat and stir in the whipped cream.
- 23. Stir the cream-sauce mixture back into the remaining pot.
- 24. Season the finished sauce with salt and pepper to taste.
- 25. Slice the rump steak or serve it whole.
- 26. Place the meat on plates and pour the morel-pepper sauce over it.
- 27. Garnish the dish with fresh thyme leaves.
