  1. 1. Place the dried morels in a bowl and cover them with about 200 milliliters of water.
  2. 2. Let the mushrooms soak in the water for about 30 minutes.
  3. 3. Strain the morels and reserve the soaking liquid.
  4. 4. Filter the collected liquid through a fine cloth or coffee filter to remove any sediment.
  5. 5. Rinse the morels briefly under running water and let them drain well.
  6. 6. Preheat the oven to 140 degrees Celsius using top and bottom heat.
  7. 7. Rinse the meat and pat it completely dry with kitchen paper.
  8. 8. Season the steak generously with salt and pepper.
  9. 9. Melt ghee in a large pan over high heat.
  10. 10. Sear the meat on all sides until it forms a brown crust.
  11. 11. Place the steak in the preheated oven.
  12. 12. Bake the meat for 5 to 10 minutes, depending on your preferred level of doneness.
  13. 13. Peel the onion and garlic and dice them finely.
  14. 14. Melt butter in the pan used for the steak (using the pan drippings).
  15. 15. Sauté the onion and garlic cubes in the butter for a short time.
  16. 16. Deglaze the pan with wine, broth, the filtered morel water, and cognac.
  17. 17. Let the sauce reduce until it has decreased by about half.
  18. 18. Strain the sauce through a fine sieve into a clean pot.
  19. 19. Add the drained morels and peppercorns to the sauce.
  20. 20. Let the sauce simmer gently for about 10 minutes over low heat.
  21. 21. Whip the cream until it forms stiff peaks.
  22. 22. Remove a small portion of the hot sauce from the heat and stir in the whipped cream.
  23. 23. Stir the cream-sauce mixture back into the remaining pot.
  24. 24. Season the finished sauce with salt and pepper to taste.
  25. 25. Slice the rump steak or serve it whole.
  26. 26. Place the meat on plates and pour the morel-pepper sauce over it.
  27. 27. Garnish the dish with fresh thyme leaves.
